Ham and Beet Salad

2 c. cooked potatoes, diced
1 c. diced, ham
1 green pepper, seeded, diced
2 c. cooked canned beets, diced
1/4 c. chopped red onion

Dressing
1 egg yolk
1 tbsp. cider vinegar
1 tsp. brown sugar
1/4 tsp. paprika
1 tbsp. prepared mustard
Dash salt
6 tbsp. salad oil
1 tbsp. minced parsley

Cut potatoes, beets, ham and red onion into a salad bowl. For dressing put egg yolk in a bowl. Add mustard, vinegar and salt. Blend well. Add brown sugar, oil, parsley and paprika. Pour dressing over salad ingredients. Cover and refrigerate for at least 2 hours for flavors to blend. At serving time sprinkle with green pepper.
