Harvard Beet Cake
1 1/2 c. Crisco oil
3 eggs
2 c. sugar
2 1/2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
2 tsp. vanilla
1 c. harvard beets
1/2 c. cottage cheese
1 c. drained crushed pineapple
1 c. chopped walnuts
1/2 c. shredded coconut
Beat well the oil, eggs and sugar. Add
together flour, cinnamon, baking soda
and salt and then add remaining
ingredients. Bake 45 to 50 minutes at
350 degrees in glass pan at 325 degrees.
