Apricot Buttermilk Salad

2 (small) packages Apricot Jell-O
1/2 cup sugar
3 cups buttermilk*
1 large can crushed pineapple
8 ounces Cool Whip

Mix Jell-O and pineapple in saucepan, let it come to a boil. Cool completely or it will not thicken. Add 3 cups buttermilk* and Cool Whip. Add sugar to pineapple. Mix well. Fold into 9x13 inch baking dish.

* Powdered buttermilk does not have to be mixed separately. I just add the powder with my flour and the water with the my other liquids and let it mix in the batter.
