Banana Bread
1 cup flour
1 cup whole-wheat flour
1/2 teaspoon baking soda
1 1/2 teaspoons baking powder
1/4 teaspoon salt
5 tablespoons butter-softened
2 eggs
1/4 cup buttermilk (I have used sour milk if I didn't have buttermilk)
5 large bananas
1 teaspoon lemon juice OR 1 t vanilla (I use vanilla)
1/2 cup sugar (or equivalent sugar substitute)
1 cup pecan or walnut pieces
Preheat oven to 350 degrees F. Grease a 9 1/2 by 5 1/2-inch loaf pan. (I have
used 2-3 small bread pans). In a large bowl, use a whisk to thoroughly blend all
dry ingredients (excluding nuts). Set aside.
In a second bowl mix until well blended and smooth, eggs, butter, buttermilk and
bananas. Add about 1/3 of the dry ingredients, mixing well, repeat until all dry
ingredients are incorporated. Fold in nuts.
If you have extra walnut or pecan halves use them to decorate the top of the
loaf. Sprinkle with additional sugar if desired. Pour into pan and bake about 1
hour and 25 minutes or until toothpick inserted comes out clean. If using small
pans, check after 45 min.

Powdered buttermilk does not have to be mixed
separately. I just add the powder with my flour and the water with the my other
liquids and let it mix in the batter.
