This buttermilk pie is delicious and taste similiar to an egg custard, but even better. Try it once and you are hooked for good.

2 cups sugar
2 Tbsp. all-purpose flour
5 large eggs, lightly beaten
2/3 cup buttermilk
? cup butter or margarine, melted
1 tsp. vanilla
1 unbaked 9-inch pastry shell

Combine sugar and flour in a large bowl; add eggs and buttermilk, stirring until blended.  Stir in butter and vanilla, and pour into unbaked pastry shell.
Bake at 350 for 45 minutes or until set? cool on a wire rack.
(Check for doneness after the minimum baking time by gently shaking the pie. The center should be set with a slight jiggle.

* Powdered buttermilk does not have to be mixed separately. I just add the powder with my flour and the water with the my other liquids and let it mix in the batter.
