Buttermilk Onion Casserole
1 pound sliced onions
1 cup
buttermilk*
1 tablespoon cornstarch
2 egg whites
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup grated Cheddar cheese
Dash of paprika
Preheat oven to 350 degrees. Put sliced onions in water and bring to a boil for
1 minute. Drain well. Put in an 8-inch square baking dish that has been sprayed
with Pam. In a bowl, combine the buttermilk and cornstarch until the cornstarch
is dissolved. Mix in the beaten egg whites, salt and pepper and pour over the
onions. Sprinkle with the cheese and then the paprika. Bake 25 minutes.
Serves 6.

Powdered buttermilk does not have to be mixed
separately. I just add the powder with my flour and the water with the my other
liquids and let it mix in the batter.
