Chocolate Buttermilk Sheetcake
1 cup margarine
4 tablespoons
cocoa
1 cup water
1/4 teaspoon salt
2 cups sugar
2 cups flour
1/2 cup
buttermilk*
2 eggs
1 teaspoon soda
1 teaspoon vanilla
FROSTING:
6 tbsp. margarine
4 tbsp. cocoa
1/4 c. milk
1 lb. powdered sugar
1 tsp. vanilla
Melt margarine in large pant. Add
cocoa, water and salt. Bring to a boil. Add
sugar, flour, buttermilk, eggs,
soda and vanilla. Beat thoroughly. Pour into greased sided cookie sheet or extra
large cake pan. Bake 15 to 20 minutes at 375 degrees or so. Frost while hot.
FROSTING:
Bring margarine, cocoa and milk to a boil. Add powdered sugar and vanilla. (use paper liners) and bake about 20 minutes at 350 degrees. Makes
about 30.
*
Powdered buttermilk does not have to be mixed
separately. I just add the powder with my flour and the water with the my other
liquids and let it mix in the batter.
