Debbie's Buttermilk Fudge Cake
1 cup water
2 sticks margarine
4 heaping tablespoons cocoa
2 cups self-rising flour
2 cups sugar
1/2 cup buttermilk
1 teaspoon soda (add to buttermilk)
2 eggs
1 teaspoon vanilla
Bring to a boil water, margarine and cocoa. Pour over flour and sugar, combine
and mix well. Add buttermilk (that has had soda added), and eggs. Pour into
greased 15x11 jelly roll pan. Bake at 350? for 25 minutes.
Frosting
1 stick margarine
6 tablespoons buttermilk
4 heaping tablespoons cocoa
1 teaspoon vanilla
1 (1 lb.) box powdered sugar
1 cup chopped pecans
Bring to boil margarine, buttermilk, and cocoa. Take off of heat and add
vanilla, powdered sugar and pecans. Beat until thick and pour over warm cake.
I have a hour for lunch, and make this often to take back to the office for an
afternoon treat. Soooo very easy to make.

Powdered buttermilk does not have to be mixed
separately. I just add the powder with my flour and the water with the my other
liquids and let it mix in the batter.
