Return to recipes using buttermilk.


Oatmeal Muffins

2 eggs
1/2 cup sugar
2 cups buttermilk*
2/3 cup. dark molasses
3 cup flour
2 teaspoons baking soda
1 tsp. baking powder
1 teaspoon salt
1 1/2 cup oats
2/3 cup chocolate chips**
3 cups trail mix

Beat eggs until light; gradually add sugar. Blend in buttermilk and molasses. Sift dry ingredients; add to buttermilk mixture. Beat only until blended. Stir in oats, trail mix and chocolate chips, just enough to combine evenly. Fill muffin cups (use paper liners) and bake about 20 minutes at 350 degrees. Makes about 30.

* Powdered buttermilk does not have to be mixed separately. I just add the powder with my flour and the water with the my other liquids and let it mix in the batter.
