Return to recipes using buttermilk.


1 cup granulated sugar
1 cup buttermilk
1 cup packed light brown sugar
2 tablespoons butter
1/8 tsp salt
1 tsp vanilla
1/2 tsp soda
1 cup pecans, broken

Use heavy 4 qt pan. Mix sugars, salt, soda, and buttermilk. Stir until sugar dissolves over low heat. Boil over moderate heat without stirring to 234 degrees. Remove from heat. Add butter, vanilla and nuts. Beat with wooden spoon until it begins to look sugary. Quickly spoon onto waxed paper. Makes about 30 pieces.

* Powdered buttermilk does not have to be mixed separately. I just add the powder with my flour and the water with the my other liquids and let it mix in the batter.
