Soft Buttermilk Cookies

1 cup shortening
2 cups sugar
1 tsp vanilla
3 eggs
1/2 tsp salt
1 Tbsp baking soda
2 Tbsp baking powder
1 cup buttermilk

Mix in enough flour to the above to make a soft dough. Roll into balls and flatten slightly. Bake until just slightly brown at edges at 350°. Be careful not to over bake. I make a big batch of butter icing and divide it into several bowls, adding different food coloring to each and making one chocolate. After icing dip into flaked coconut.

* Powdered buttermilk does not have to be mixed separately. I just add the powder with my flour and the water with the my other liquids and let it mix in the batter.
