Return to recipes using buttermilk.

I have made this recipe for years when our girls were very young after Easter because we would have so many egg leftover. Also this is an easy meal to have because you can chop everything up the night before.

Susie's Creamed Eggs
2 tablespoons butter
6 tablespoons onion, finely chopped
2 tablespoons green pepper, finely chopped
2 tablespoons red pepper, finely chopped
1 teaspoon salt
1 teaspoon pepper
1/2 to 1 teaspoon garlic powder
2 cups buttermilk*
2 tablespoons corn starch
6 hard cooked eggs, chopped

Melt the butter then add the onion, green pepper and red pepper cooking for about 4 to 5 minutes. Mix buttermilk and corn starch together well. Add to sauté vegetables salt, pepper and garlic powder mixing well. Add buttermilk mixture to the vegetable mixture mixing well and then add the chopped eggs in. Let this mixture get as thick as you like. We like it thick.

* Powdered buttermilk does not have to be mixed separately. I just add the powder with my flour and the water with the my other liquids and let it mix in the batter.
