Tona's Buttermilk Chicken
4 chicken breasts
~ I used chicken breasts without the bone. I flattened them slightly with the
flat side of a meat tenderizer.
1 1/2 cups buttermilk, divided (do not use powdered buttermilk that you
reconstitute)
3/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup butter
1 can Cream of Mushroom soup OR Cream of Chicken soup
Combine flour, salt and pepper. Dip chicken into ½ cup buttermilk. Roll in
flour, salt and pepper mixture. Melt butter in a baking pan, lay chicken breasts
on top of butter in pan. Bake at 425° uncovered for 30 minutes. Turn and bake 15
minutes more. Turn chicken breasts again. Mix together 1 cup buttermilk and
Cream of Chicken or Cream of Mushroom soup. Spoon over chicken breasts. Bake 15
minutes more.

Powdered buttermilk does not have to be mixed
separately. I just add the powder with my flour and the water with the my other
liquids and let it mix in the batter.
