Cabbage Gratin (2 WW Points)

Vegetable cooking spray
4 cups cabbage -- coarsely chopped
1 cup carrot -- coarsely shredded
1/2 cup sliced green onions
1 cup skim milk
1/4 cup Gruyere cheese
1/2 teaspoon caraway seeds
1/4 teaspoon salt
2 eggs, lightly beaten
1 egg white
2 tablespoons minced fresh parsley
1 tablespoon grated Parmesan cheese
Coat a small saucepan with cooking spray; place over medium heat until hot. Add
cabbage, carrot, and green onions; saute 7 minutes or until tender. Spoon
cabbage mixture into a 10 x 6-inch baking dish coated with cooking spray.
Combine milk and next 5 ingredients (milk through egg white) in a medium bowl;
stir well. Pour over cabbage mixture. Combine parsley and Parmesan cheese;
sprinkle over cabbage mixture. Bake at 375 degrees for 40 minutes or until knife
inserted in center comes out clean. Let stand 5 minutes before serving.
