Rice and Tomato Casserole
1 c. long grain rice
1 (16 oz.) can tomatoes
1 c. onion
1/2 c. bell pepper
1 c. chicken, chopped
1 c. ham, chopped
1 c. chicken broth
1/2 tsp. thyme
1 tbsp. margarine
Simmer the onions and bell pepper in the margarine until tender. Then add the
chicken, ham, thyme, rice and the tomatoes, diced and the juice. Mix all the
ingredients and pour in your casserole dish. Pour the chicken broth over top.
Cover and bake 45 minutes to 1 hour at 350 degrees. A great supper for all.
