Chocolate Cream Pie
1/3 c. flour or 1/4 c. cornstarch
1 c. sugar
1/4 tsp. salt
2 c. milk, scalded
3 tbsp. butter
1/2 tsp. vanilla
2 (1 oz.) sq. unsweetened chocolate
3 eggs
Mix flour, sugar and salt. Gradually add milk that has had chocolate melted in
it. Cook over moderate heat, stirring constantly, until mixture thickens and
boils. Cook 2 minutes. Remove from heat. Add small amount of cooked mixture to
egg yolks; stir into remaining hot mixture. Cook 1 minute, stirring constantly.
Add butter, vanilla and cool. Pour in baked pie shell. Cover with meringue made
of 3 egg whites and 6 tablespoons sugar. Bake in moderate oven, 350 degrees, for
15 minutes.
