Christmas Gift Ideas

CRANBERRY POPCORN BALLS
3 qt. popped popcorn
1 1/2 c. water
1 tsp. whole cloves
1 tsp. whole allspice
2 cinnamon sticks
1 c. chopped frozen cranberries, thawed
1 1/3 c. sugar
2 tbsp. light corn syrup
1 tbsp. shredded orange peel
1/4 tsp. ground nutmeg
3-4 drops red food coloring

Preheat oven to 250 degrees. Place popcorn in a large, 4 inch deep, buttered baking pan. Keep warm in the oven. Pour water into a large buttered saucepan. Securely tie cloves, allspice and cinnamon in a piece of cheesecloth and place in water. Cover saucepan and simmer 20 minutes. Remove spices from pan. Stir in cranberries, sugar, corn syrup, orange peel, nutmeg and food coloring. Cook over medium heat, stirring constantly until sugar dissolved and mixture begins to boil. Continue cooking until mixture reaches 250 degrees on a candy thermometer. Remove popcorn from heat. Pour syrup mixture slowly over popcorn, stirring to coat. Shape into balls. Allow to cool, wrap in plastic wrap, tie with colored ribbon and give as gifts during the holiday season.


SEASONED CRACKERS
2 pkgs. oyster crackers
3/4 c. vegetable oil
1 tsp. garlic salt
1 tsp. dill weed
1 pkg. Hidden Valley ranch dressing

Put crackers in brown grocery bag. Put newspaper on counter top or kitchen sink and put bag of crackers on top. Mix oil and all remaining ingredients and pour over crackers. Stir with large spoon and let sit 15 minutes. Transfer to another brown bag and let sit for 1 hour or so. Put crackers in airtight containers or seal ziplock bags. Great gift idea for all holiday seasons.


SPICED WALNUTS
1/4 c. water
1 c. sugar
1/4 tsp. nutmeg
1/4 tsp. ginger
1 tsp. cinnamon
1 lb. bag walnuts

In a large skillet put water, sugar and spices. Allow to boil and thicken. Put walnuts in pan and coat them with mixture. Spread out on a flat surface, separate and let them cool. Great for a holiday gift.


ORANGE CINNAMON TEA MIX
1/2 c. instant tea
2 c. Tang
1 lg. pkg. instant lemonade
3/4 c. sugar
1/2 tsp. cinnamon
1/2 tsp. allspice

Combine all ingredients. Store in airtight jar. Use 1 heaping teaspoon per cup of boiling water. Makes a nice holiday or hostess gift.


PUMPKIN BREAD
3 1/2 c. flour
3 c. sugar
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. nutmeg
2 tsp. cinnamon
2 tsp. allspice
1 tsp. vanilla
1 c. vegetable oil
1 (16 oz.) can pumpkin
2/3 c. water
4 eggs
1 c. raisins

Mix dry ingredients; add vanilla, oil, pumpkin, water, eggs, and raisins. Bake in two greased loaf pans or 1 large Bundt pan at 350 degrees for 1 hour. If desired, sprinkle with powdered sugar. Note: Bundt pan version makes a pretty buffet item or holiday gift.


APPLESAUCE COOKIES
1 cup brown sugar
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
3/4 cup raisins
3/4 cup chopped nuts

Combine flour, salt, cinnamon and baking soda - stir well. Place flour
mixture in a clean mason jar. Pack down tight so everything will fit in the jar. (Use a spoon or a mallet.) Add other ingredients, one item at a time, packing each layer down.

Put the lid on the jar and tie a ribbon around the lid. You can add a
personalized label, if you wish. As an added touch, tie a wooden spoon to the lid with a piece of ribbon.

INSTRUCTIONS FOR GIFT CARD:

To make Applesauce Cookies:
Whip 3/4 cup of butter or shortening until light and fluffy. Add 1 egg and 1/2 cup applesauce and beat until mixed. Stir in the ingredients from this jar until well combined. Drop teaspoons of dough on a greased cookie sheet. Bake for 8 - 12 minutes at 350 degrees F.


APPLE CINNAMON PANCAKE MIX
3 cups all-purpose flour
1/2 cup dried apples (more if desired)**
3 TBSP sugar
2 TBSP baking powder
4-1/2 tsp. ground cinnamon
1-1/4 tsp. salt

In 1 quart jar, combine all ingredients; seal jar.

**Variations: Try substituting the apples for other dried fruits if desired,
OR leave out fruit altogether.

GIFT CARD INSTRUCTIONS:

To make Apple Cinnamon Pancakes:
In medium bowl, combine 3/4 cup milk, 1 egg, and 2 TBSP salad oil. With
fork, blend in 1-1/3 c. pancake mix until moistened but still lumpy. Cook on
lightly greased griddle or skillet. Makes about 10 5" pancakes.


BOSTON BAKED BEANS MIX
2 c Small white pea beans
1/2 tsp dried thyme
1 Bay leaf
1/4 tsp Ground ginger
1/2 tsp Pepper
1 1/2 tsp Salt

Mix and store in an airtight jar.

ATTACH THE FOLLOWING INSTRUCTIONS TO THE JAR:

"Boston Baked Beans"

1 jar Bean Mix
2 slices bacon; diced
4 3/4 c water
3/4 c chopped onion
1 clove garlic; minced
3 tbs dark molasses
2 tbs mustard

Combine all ingredients in bean pot or crockpot. Cook at 300 in oven, or on
low in crockpot 10-12 hours, stirring occasionally to prevent sticking. 8-10
servings.


BROWNIE MIX
2 1/4 cups sugar
2/3 cup cocoa (clean inside of jar with paper towel after this layer)
3/4 cup chopped pecans
1-1/4 cups flour mixed with 1 tsp. salt + 1 tsp. baking powder

Layer ingredients in jar in order given. Press each layer firmly in place
before adding next ingredient.

RECIPE TO ATTACH TO JAR:

To make Brownies:
Empty brownie mix in large mixing bowl; stir to combine. Add 3/4 cup melted
butter and 4 eggs slightly beaten; mix until completely blended. Spread
batter in a greased 9x13-inch baking pan. Bake at 350 for 30 minutes. Cool
completely in pan. Cut into 2-inch squares. Yield: 2 dozen.


BUTTERSCOTCH BROWNIES
2 cups all-purpose flour
1 1/2 tablespoons baking powder
1/4 teaspoon salt
1/2 cup flaked coconut
3/4 cup chopped pecans
2 cups packed brown sugar

To a one liter jar, add flour, baking powder, and salt; stir together, and
pack down. Then add and pack down remaining ingredients in this order:
coconut, pecans, brown sugar.

ATTACH A LABEL WITH THE FOLLOWING INSTRUCTIONS:

To make Butterscotch Brownies:
Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking
pan. Empty jar of brownie mix into a large mixing bowl; stir to break up
lumps. Add 3/4 cup softened butter, 2 beaten eggs, and 2 teaspoons of
vanilla extract; mix until well blended. Spread batter evenly in the
prepared pan. Bake for 25 minutes. Allow to cool in the pan some before
cutting into squares.


BUTTERSCOTCH PUDDING MIX
2 cups nonfat dry milk
5 cups brown sugar, packed
1 tsp. salt
3 cups cornstarch

Mix and store in airtight container; divide into gift jars.

ATTACH TAG TO GIFT JAR:

To make Butterscotch Pudding:
Add 1/2 cup mix to 2 cups milk. Heat and stir constantly while boiling.
Cool, then serve.


CAFE MOCHA MIX
1 1/2 cups instant coffee granules
1/4 cup each unsweetened cocoa, and powdered nondairy creamer
6 tbs. powdered sugar

Place all ingredients into a blender or food processor and mix until finely
ground. Store in an air tight jar.

ATTACH TO JAR:

To make Cafe Mocha:
Mix 1-2 tablespoons mix into 3/4 cup boiling water.


CHOCOLATE CHIP COOKIES
1 2/3 cups all-purpose flour
3/4 teaspoon baking soda
1/2 cup white sugar
2 cups semisweet chocolate chips
1/2 cup packed brown sugar

Combine the flour, baking soda, white sugar, and the chocolate chips. Place
1/2 of the mixture in a clean quart sized glass jar, and pack firmly. Place
the brown sugar on top, again packing firmly. Place the remaining flour
mixture on top. Cover with a lid.

ATTACH THE FOLLOWING TAG TO THE JAR:

To make Chocolate Chip Cookies:
Empty contents of jar into a large bowl. In separate bowl combine 3/4 cup of butter, 1 1/2 eggs, and 1 teaspoon vanilla. Beat until creamy. Add to dry mixture. Drop by tablespoonful onto an ungreased cookie sheet, and bake in a preheated 375 degrees F (190 degrees C) oven for 8 to 10 minutes. Makes 2 dozen.


CHOCOLATE PUDDING MIX
2 1/2 cups instant nonfat dry milk
5 cups sugar
3 cups cornstarch
1 teaspoon salt
2 1/2 cups unsweetened cocoa

Mix well and store in airtight container; divide into gift jars.

ATTACH THIS NOTE TO JAR:

To make Chocolate Pudding:
Make sure you stir mix before using - then measure out 2/3 cup of mix in a medium saucepan. Add 2 cups milk, one teaspoon vanilla and one tablespoon butter and cook over low heat stirring constantly until mixture comes to a boil. Continue cooking and stirring for one minute. Remove from heat and allow to cool. May be placed in individual serving bowls then cooled.


COBBLER MIX
1 cup all-purpose flour
1 tsp. baking powder
1 cup sugar
1 tsp. powdered vanilla
1 tsp. cinnamon

Combine and blend the ingredients in a small bowl. Store in an airtight container.

ATTACH THIS TO THE JAR:

"Berry Cobbler"
4 cups fresh berries (blueberries, raspberries or boysenberries)
1/4 cup orange juice
1/4 cup sugar
1 jar Cobbler Mix
1 cup unsalted butter, melted
1 egg

Preheat oven to 375. In a large bowl mix together 4 cups of assorted fresh berries with 1/4 cup each lemon juice and sugar. Pour this mixture into a 13X9 inch baking dish. In a separate bowl combine Cobbler mix with 1 cup of melted sweet butter, and 1 egg. Mix until everything sticks together. Drop by spoonfuls over the top of the berry mixture. Bake for 35-45 minutes. Allow to cool for 15 minutes before serving. Serves 8-10.

VIENNESE HOT COCOA MIX
8 c. dry non fat milk powder
1 1/4 c. unsweetened cocoa powder
1 1/4 c. sugar (or 30 packets sugar substitute)
1/2 c. instant coffee
2 tbsp. cinnamon

Whisk all ingredients. To make cocoa: 1/3 cup mix to 8 ounces skim milk.


COUNTRY SOUP
1/2 c. split green peas
1/2 c. barley
1/2 c. lentils
1/2 c. raw rice
2 tbsp. parsley
2 tbsp. onion flakes
2 tsp. salt
1/2 tsp. lemon pepper
2 tbsp. beef bouillon
1/4 c. alphabet noodles

Use dried ingredients and seasonings. Layer peas, barley, lentils, and rice in 1 quart jar. Layer the parsley, onion flakes, salt, lemon pepper and beef bouillon just around the edges. Put the alphabet noodles just around the edges. Fill the remaining part of the jar with twist macaroni. Give as a gift with instructions to add 3 quarts of water, 2 stalks of chopped celery, 2 slices carrots, 1 cup shredded cabbage, 2 cups of tomatoes and simmer until vegetables are tender. You can add a nice touch by placing a piece of fabric over the cover and securing it with a ribbon or yarn.


Potato Chip Cookie Mix in a Jar
1 cup white sugar
1 1/2 cups crushed potato chips
2/3 cup chopped pecans
2 1/2 cups all purpose flour
1 teaspoon baking powder

Directions:
Use a 1 quart wide mouth canning jar. Pack each layer.
In a small bowl, stir together the flour and baking powder.
Layer the sugar, the potato chips, pecans and then the
flour/baking powder mixture. It will be a tight fit.
Seal and decorate the jar and attach the tag.

Potato Chip Cookie Mix
You will need:
1 cup softened butter, (2 sticks)
1 teaspoon vanilla
1. Empty jar contents into a large mixing bowl and mix
thoroughly.
2. Add the butter and vanilla and mix until blended completely.
3. Shape into walnut sized balls.
4. Place on ungreased baking sheet and flatten.
5. Bake at 350 degrees F (175 degrees C) for 14 - 18 minutes,
until edges are very lightly browned.
6. Let cool 5 minutes on the cookie sheets.
7. Remove to wire racks to cool completely.
Makes 2 1/2 dozen.

Cinnamon Bar Cookies Mix
1 c. sugar
2 c. sifted flour
1 1/2 tbsp. ground cinnamon
1 tsp. salt
1 1/2 c. powdered or chopped walnuts

Use a 1 quart wide mouthed jar.
Mix the sugar, flour, cinnamon and salt together
and pour in the jar. Place the nut into a resealable
bag and place on top of mix. Seal, decorate and
attach the recipe tag.

Cinnamon Bar Cookies
You will need:
1 c. butter, (2 sticks)
1 egg, yolk separated from white
Preheat oven to 325. Grease and flour a 15 1/2x10 1/2x1" baking pan.
Beat the butter and egg yolk together.
Remove the nut bag from the jar and set aside.
Add the jar ingredients to the butter mixture and mix well.
Press the batter into the pan.
Beat the egg white until foamy and spread sparingly over top of the batter.
Sprinkle the nuts on top and press on.
Bake for 30 minutes. Cut into bars.
Makes 48.

Chocolate Peanut Butter Square Cookies Mix
1 1/2 c. crushed graham cracker crumbs
1 lb. powdered confectioners sugar
1 12oz. bag milk chocolate chips

Use a 1 quart, wide mouth jar.
Mix the graham crumb and sugar together and
pour into the jar and pack. Pour the chocolate
chips into a resealable bag and place on top
of the crumb mixture. Seal and decorate jar
and attach recipe tag.

Chocolate Peanut Butter Square Cookies
you will need:
1 1/2 c. peanut butter
1 c. melted butter, (2 sticks)

Remove the chips bag from the jar and set aside.
Pour the jar contents into a bowl and combine with
the peanut butter. Mix well.
Blend in the melted butter until well combined.
Press the mixture evenly into a 9x13x2" pan.
Melt the chocolate chips in the microwave or in a double boiler. Spread the hot melted chocolate over the peanut butter mixture. Chill until firm and cut into small bars.

Gingerbread Cookie Mix & Ginger Snap Cookies
Gingerbread Cookie Mix

Ingredients to layer in the jar:
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 cup packed brown sugar
1 1/2 cups all-purpose flour
2 teaspoons ground ginger
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1 teaspoon ground allspice

Mix 2 cups of the flour with the baking soda and baking powder. Then mix the remaining 1 1/2 cups flour with the spices.

In a one-quart, wide-mouth canning jar. Layer the ingredients starting with the flour baking powder mixture then the brown sugar and finally the flour and spice mixture. Use the bottom of a small clean juice glass and press each layer firmly in place.
Store in a cool dry place away from a heat source so condensation and clumping does not occur.
If you are giving this as a gift, write the following instructions on a card and attach to the jar:

Gingerbread Cookies

1. Empty contents of jar into a large mixing bowl. Blend together well.
2. Add 1/2 cup softened butter or margarine, 3/4 cup molasses and 1 slightly beaten egg. Mix until completely blended. Dough will be very stiff so you may need to use your hands. Cover and refrigerate for 1 hour.
3. Preheat oven to 350 degrees F (175 degrees C).
4. Roll dough to 1/4 inch thick on a lightly floured surface. Cut into shapes with a cookie cutter. Place cookies on a lightly greased cookie sheet about 2 inches apart.
5. Bake at 350 degrees F (175 degrees C) for 10 to 12 minutes. Decorate as desired.


Ginger Snap Cookies
You will need the following ingredients to make these cookies:

1 cup packed dark brown sugar
3/4 cup sugar
1/4 cup molasses
1/4 cup shortening
1 tablespoon butter, softened
1 egg
1/2 teaspoon vanilla
2 1/2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground ginger
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 cup water

Preheat your oven to 350 degrees.
Cream together the sugars, molasses, shortening, butter, egg, and vanilla in a large bowl. Beat with an electric mixer until smooth. In another large bowl combine the flour, baking soda, ginger, salt, cinnamon, and cloves. Pour the dry mixture into the wet mixture and beat while adding the water. Continue to mix until the ingredients are mixed together.
Measure a heaping teaspoon of dough at time. Roll the dough into a sphere between the palms of your hands then press the dough onto the cookie sheet. Flatten to about 1/8-inch thick. You can also roll this dough out and cut out shapes.
Bake cookies for 10-14 minutes or until edges begin to brown and cookies are crispy when cool.
Makes 120 (10 dozen) cookies.

Brownies Mix In a Jar
1 2/3 cups white sugar
1/4 cup unsweetened cocoa powder
1/2 cup chopped walnuts or pecans
1 cup all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon salt
1/4 cup chocolate chips

Mix together flour, baking powder, and salt.
Place sugar in the bottom of a wide mouth 1 quart canning jar.
Layer the remaining ingredients on top of sugar,
cocoa, flour mixture, nuts, and chocolate chips.
Seal and decoarte jar. Attach recipe tag.
(To be more festive, the top of the jar can be decorated with
a piece of fabric or colorful gift wrap, tied with a ribbon or
gift card.)

(Double Fudge Brownies #2)
Brownies
You will need:
1/2 c. margarine or butter
3 slightly beaten eggs
1 jar of mix
Pour jar contents into a large mixing bowl.
Add margarine and eggs, and mix until well blended.
Spread batter in a well greased 13x9x2 baking pan.
Bake at 350 oven for 30 minutes or until toothpick
comes out clean. Cool and then cut into 2 inch squares.
Makes about 2 dozen delicious brownies.

This can be kept on the shelve for up to 3 months.

Brownie Mix #3
Ingredients:
2 1/4 C white sugar
2/3 C unsweetened cocoa powder
1/2 C chopped pecans
1 1/4 Cs all-purpose flour
1 t baking powder
1 t salt

Pour sugar into a clean and dry one quart jar. Press down
firmly.

Add cocoa powder and press down firmly.

Pour in chopped pecans, make sure pecans are evenly layered in the jar.

Combine flour, baking powder and salt. Pour into jar and
seal.

Attach the following directions to the jar:

Empty mix into large bowl; mix thoroughly. Add 3/4 cup of butter or margarine and 4 slightly beaten eggs. Mix until completely blended. Spread batter into a lightly greased or sprayed 9 x 13 inch pan. Bake at 350 for 30 minutes or until done. Cool in pan. Cut into 2 inch squares.

Brownies In A Jar
This mix is the first step to a batch of the best fudge brownies you've ever sampled. No chocolate lover will be able to resist them.

1/3 cup unsweetened cocoa powder
1-1/2 cups sugar
1/2 cup semisweet chocolate pieces
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped walnuts
1/2 cup white baking pieces

1/2 cup butter, melted and cooled
2 slightly beaten eggs


1. Layer in a 1-quart glass jar or canister the following ingredients: cocoa powder, sugar, chocolate pieces, flour, baking powder, salt, walnuts, and white baking pieces. Tap jar gently on the counter to settle each layer before adding the next. Cover jar and store at room temperature up to one month. Or, attach baking directions and give as a gift.
2. Baking directions: Heat oven to 350 degrees F. Grease and flour an 8x8x2-inch baking pan. Combine butter and eggs in a large bowl. Stir in jar contents. Spread into prepared pan. Bake for 35 minutes or until edges begin to pull away from pan. Cool in pan on a wire rack. Cut into bars. Makes 16.

Hawaiian Cookie Mix
1/2 cup white granulated sugar
1/3 cup packed brown sugar
1/3 cup packed flaked coconut
2/3 cup chopped macadamia nuts
2/3 cup chopped dates
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder

Use a 1 quart, wide-mouth canning jar. Pack each layer.
Mix the flour, baking soda and baking powder together
in a bowl and set aside.
To the jar add the white sugar, the brown sugar, the
coconut, the nuts, the dates, and the flour mixture.
Seal and decorate the jar and attach the recipe tag.

Magic Cookie Bars Mix
1 6oz. package chocolate chips
1 3 1/2oz. bag flaked coconut or 1 1/3 cups
1 cup chopped pecans
1 1/2 cups graham cracker crumbs

Use a 1 quart, wide-mouth canning jar. Pack each layer.
To the jar add the chocolate chips, the coconut, and the
pecans. Place the graham cracker crumbs into a plastic
sandwhich bag or sealing bag and place the bag in the
jar on top of the packed ingredients. Seal and decorate
the jar, and attach the recipe tag.

Magic Cookie Bars
You will need:
1/2 cup butter, melted
1 14oz. can condensed milk
Use a 9x13x2" baking pan and pour in the melted butter.
Spread the graham cracker crumbs. In a large bowl, add
the condensed milk and the jar contents and mix. Pour onto
the crumbs and pack firmly in the pan. Bake at 350 degrees
for 25-30 minutes or until lighly golden. Cool.

Molasses Cookie Mix
2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder

Molasses Cookies
You will need:
3/4 cup butter, softened
1 egg
1/4 cup molasses
white sugar
Use a large bowl to combine the butter, egg and molasses.
Add the jar contents and mix thoroughly. Roll into 1" balls
and roll in sugar. Place 2" apart on an ungreased cookie sheet.
Bake at 375 degrees F. for 9-11 minutes. Cool.

Crunchy Munchy Cookie Mix
1 cup all-purpose flour
1/2 teaspoon baking powder
3/4 teaspoon baking soda

2 tablespoons flaked coconut
3/4 cup semisweet chocolate chips
1 cup rolled oats

Use a 1 quart, wide-mouth canning jar. Pack each layer.

together and pour into the jar. Next add the white sugar,
the brown sugar, the cereal, the coconut, the chocolate

1/2 cup packed brown sugar
1/4 cup white sugar
3/4 cup wheat germ
1 cup quick cooking oats
1/2 cup dried cherries
1/2 cup raisins
2/3 cup packed flaked coconut
1 cup flour
1/2 tsp. baking soda
1/2 tsp. salt.

Use a 1 quart, wide-mouth canning jar. Pack each layer.
Mix the flour, baking soda and salt in a bowl. Set aside.
To the jar add the brown sugar, the white sugar, the
wheat germ, the oats, the dried cherries, the raisins,
the coconut, and the flour mixture. Add more raisins
or coconut to fill any left space. Seal and decorate jar,
and attach the recipe tag.

10-12 minutes. Cool and use your favorite icing, if desired.

the flour mixture. Place the orange candy in a sandwich
bag. Close the bag and place on top of the other
ingredients in the jar. Seal and decorate the jar, and
attach the recipe tag.

Orange Slice Cookies
You will need:

large bowl
Set the bag of orange slice candy aside. Pour the jar contents
in a large bowl and mix well. Add the butter, egg and vanilla,
blending well. Add the candy and combine with dough. Roll
2" balls and place 2" apart on a greased cookie sheet. Bake
at 375 degrees F. for 12-15 minutes or until lightly golden. Cool.

Lemon Bread
1/2 c. solid shortening
1 c. sugar
2 eggs beaten
1 2/3 c. all purpose flour
1 tsp. baking powder
1/2 tsp. salt
1/2 c. milk
1/2 c. nuts
Grated peel of 1 lemon
1/4 c. sugar
1/4 c. lemon juice

Cream shortening and sugar, add eggs. Sift flour, measure and shift again with baking powder and salt. Alternately, add flour mixture and milk to shortening mixture, blending well. Stir in nuts and lemon peel. Pour into 9 x 5 loaf pan. Bake at 350 degrees for 1 hour. Combine sugar and lemon juice and pour over loaf while hot. Let cool and remove from pan. It will have a nice lemony crust. Makes a great Christmas gift. Freezes well.


Strawberry Bread
3 c. + 3 tbsp. flour
1 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
2 c. granulated sugar
2 (10 oz.) pkgs. frozen strawberries, thawed
4 eggs, well beaten
1 1/4 c. vegetable oil
1 1/4 c. chopped pecans

Mix dry ingredients in large bowl. Make a well in the center and add the strawberries and eggs. Then add oil and pecans. Mix thoroughly. Pour batter into 2 greased and floured standard loaf pans. Bake at 350 degrees for 1 hour or until breads tests done. Cool on rack. Makes a nice Christmas exchange gift with a dish of strawberry flavored cream cheese.


Chocolate Zucchini Bread
1 tsp. oleo
1 oz. unsweetened chocolate
1/2 c. oil
1 c. sugar
1 tsp. vanilla
1/2 c. chopped almonds
1 c. finely grated unpeeled zucchini
1/4 tsp. baking powder
1/2 tsp. soda
1/2 cinnamon
1 1/2 c. flour
1/2 tsp. salt

Over low heat melt butter and chocolate. Combine oil, eggs and sugar, beat well. Stir in vanilla, melted chocolate, almonds and zucchini. Sift together dry ingredients add to zucchini mixture. Pour into greased and floured 9x5 loaf pan. Bake on middle rack of 350 degree oven about 1 hour and 10 minutes or until toothpick test done. Cool in pan 10 minutes. This bread is a nice alternative to fruit cake for a Christmas gift.


Pumpkin Bread
2/3 c. shortening
2 2/3 c. sugar
4 eggs
1 can pumpkin
2/3 c. water
3 1/3 c. flour
2 tsp. soda
1 1/2 tsp. salt
1/2 tsp. baking powder
1 tsp. cinnamon
1 tsp. cloves
2/3 c. nuts
Raisins (opt.)

Grease 2 loaf pans or 4 coffee cans. Mix shortening, sugar and stir in eggs, pumpkin and water. Blend in flour, soda, salt, baking powder, cinnamon and cloves. Stir in nuts or raisins. Pour into pans. Bake 1 hour and 10 minutes (less for coffee cans) at 325 degrees. The coffee can baked bread makes a nice gift size at Christmas, also pretty sliced, as the slices are rounds.


Easy Peanut Clusters
1 (12 oz.) pkg. chocolate chips
1 (12 oz.) pkg. butterscotch pieces
3 c. salted Spanish peanuts

Melt chips. Add peanuts. Drop by teaspoonsfuls onto wax paper and let cool. Store with wax paper between each layer so they won't stick together. Cover peanut can with wrapping paper (Christmas, etc.) and stick matching bow on plastic cover. Don't forget wax paper between each layer. Makes a great Christmas gift.

 


Roasted Pecans
1 lb. pecan halves
1 egg white
1 tsp. cold water
1/2 c. white sugar
1/4 tsp. salt
1/2 tsp. cinnamon

Beat egg white and water until frothy, but not stiff. Add pecans and mix until all nuts are coated. Mix sugar, salt and cinnamon together. Add nuts and mix thoroughly. Place in a buttered 10x15 cookie sheet with sides. Bake in a 225 degree oven for one hour, stirring every 15 minutes. Makes a wonderful Christmas gift.


Peanut Patties (Microwave)
Combine in 2 quart glass bowl:
2 c. sugar
Dash of salt
1/2 c. water
1/2 c. white Karo

Cook on high 4 minutes. Stir and add 1 1/2 cups raw peanuts. Cook on high for 8 minutes.

Stir and add:
2 tbsp. butter
1 tsp. vanilla
2-3 drops red food coloring

Beat until creamy and drop on waxed paper. I pour on a pizza pan which I sprayed with Pam. I then wait until it cools. Cover in Saran Wrap. Add a gold bow and give for a Christmas gift.


Seven Layer Bars
2 cubes margarine
2 c. graham cracker crumbs
2 c. coconut
1 lg. pkg. chocolate chips
1/2 c. chopped walnuts
1 can Eagle Brand milk

Melt margarine and stir in graham cracker crumbs. Press into bottom of 9x13 pan. Spread coconut over graham crackers. Then spread chocolate chips over coconut. Then spread walnuts over chocolate chips. Pour Eagle Brand milk evenly over entire mix. Bake at 350 degrees for 20-30 minutes. Cut into bars and serve. The bars make a nice Christmas gift.


Nut Caramels
1 c. heavy cream mixed with 1/2 c. milk
1/2 c. sugar
1/2 c. brown sugar
3/4 c. light corn syrup
Dash of salt
1/2 tsp. vanilla
1/2 c. chopped nuts
2 tbsp. butter

In large saucepan mix 3/4 cup cream mixture, sugars, corn syrup and salt. Bring to boil over medium heat stirring to dissolve sugars. Cook syrup to 234 degrees (soft-ball stage). Stir occasionally. Very slowly stir in remaining 3/4 cup cream mixture so syrup mixture continues to boil. Cook stirring occasionally to 244 degrees (hard ball stage). Remove from heat, stir in vanilla, nuts and butter. Pour into greased 9 x 5 x 3 inch loaf pan. Cool to room temperature. Turn out of pan and using scissors or knife, cut into pieces and wrap in plastic wrap. Store in cool, dry place. GREAT CHRISTMAS GIFT!


Cranberry Jam
3 1/2 c. cranberries
2 c. water
1 (1 lb. 4 oz.) can crushed pineapple, undrained
8 c. sugar
1/2 bottle liquid pectin

Measure cranberries, (remove stems); then put through food grinder (I use blender). Place cranberries and water in large saucepan and cook for 5 minutes. Add pineapple with syrup and sugar and boil 2 minutes longer. Remove from heat and add pectin. Mix well and let stand for 25 minutes. Pour into jelly jars and seal. Makes 8 or 9 half pints. This jam is a lovely little gift to give at Christmas time.

2 1/2 cups coconut
1 1/2 cups cornflake cereal

Use a one quart, wide-mouth canning jar
Combine the sugar and salt and pour into the jar, packing firmly
Pour in the coconut, packing firmly and spreading evenly
Pour in the cereal ( without packing)
Seal and decorate the jar, and attach the recipe tag to the jar

Attach the recipe tag to the jar:
Cornflake cookies
You will need:
3 egg whites, whipped
1/2 tsp. vanilla
After whipping the eggs, add the vanilla and the jar contents and mix thoroughly. Using a teaspoon, drop the dough onto an ungreased cookie sheet. Bake at 325 degrees F. for 15 minutes. Cool.


Non-edible Gifts

HAND LOTION
20 oz. distilled water
16 oz. Unibase
8 oz. bottle glycerine
4 oz. Johnson baby oil

Put all but water in large dish and beat with electric mixer. Add water and beat until thick, about 30 minutes. Do not use metal dish. Makes about 1 gallon. Nice Christmas gift.


LAVENDER POWDER SACHET
1/2 oz. dried powdered lavender flowers
1/2 tsp. powdered cloves

Mix 2 ingredients, then sew up snuggly in a cloth pouch or "pillow". Use in drawers or hang in closets or put with your linens. It makes a nice little gift.
