Short Ribs and Vegetables

3-1/2 Pounds beef short ribs
1 Tablespoon vegetable oil
1 Large onion, cut into wedges
1 Cup water
1 Cup tomato ketchup
1/3 Cup red wine vinegar
1 Tablespoon paprika
1 Teaspoon curry powder
1/2 Teaspoon chili powder
1/2 Teaspoon dry mustard
2 Teaspoons salt
4 Medium potatoes, peeled
4 Medium carrots, pared, cubed
1 Tablespoon cornstarch, (optional)
1/4 Cup water

Mix all ingredients at cook on low for 6 to 8 hours.
4 servings.
