Easter Egg Dye Recipes

Easter Egg Dye
1/4 tsp. food color
3/4 c. boiling water for each color
1 tbsp. vinegar for each color

For each color, measure food color, water and vinegar into
bowl about size of a cereal bowl. Mix well with spoon, use
separate spoon for each color. To make orange dye: mix equal
amounts of red and yellow. To make purple dye, mix blue and
red. To make green dye mix blue and yellow.

Easter Candy

Easter Nests
12 oz. butterscotch chips
1/2 c. peanut butter
1 c. Spanish peanuts
5 oz. Chinese noodles

Melt butterscotch chips, add peanut butter and blend. Add
peanuts and Chinese noodles and blend well. Form into nests
on waxed paper and cookie sheet. Cool in refrigerator. Add
jelly beans, M & M's or candy of your choice.

Easter Eggs
Put 2 sticks melted butter into 3 cups graham cracker crumbs,
2 cups peanut butter and 1 teaspoon vanilla. Add 1 box
powdered sugar. Make into eggs. Dip into melted butterscotch
chips with a little wax added. Chocolate or peanut butter
chips may be used also.

Easter Cakes and Pies

Easter Carrot Cake
2 c. sugar
1-1/2 c. vegetable oil
4 eggs
3 c. grated carrots (about 7)
2 c. all-purpose flour
2 tsp. baking soda
2 tsp. baking powder
2 tsp. cinnamon
1 c. chopped nuts
Cream Cheese Frosting (below)

In mixing bowl, combine sugar and oil. Add eggs, one at a time, beating well. Mix in carrots. Combine in bowl flour, baking soda, baking powder and cinnamon. Sift. Add flour mixture to carrots mixture. Mix. Add nuts. Pour into greased and floured two round cake pans. Bake in 325 degree oven for 45 minutes to 1 hour or until cake test done.

Cream Cheese Frosting
1 (8 oz.) pkg. cream cheese, softened
1/2 c. soft margarine
1 (1 lb.) box powdered sugar
1 tsp. vanilla
Chopped nuts sprinkled on top of frosted cake (optional)

Combine cream cheese, margarine, powdered sugar and vanilla; mix well. Use to frost cooled cake. Sprinkle chopped nuts over top for garnish. Note: I make this cake the day before and place it in an airtight cake. Cover in the refrigerator.

Easter Marshmallow Salad

1 pkg. mini-marshmallows*
1 can pineapple chunks
1 c. chopped walnuts
1 1/2 lbs. sliced seedless grapes (red are prettiest)
Make 1 pkg. vanilla pudding and cool
Whip 1/2 pt. (1 c.) whipping cream - blend with pudding
Can use traditional white marshmallows, but you can use pastel colors).
