Zesty Vegetable Marinade
1/3 cup vegetable oil
1 tablespoon wine vinegar
2 tablespoons fresh squeezed lemon juice
1 teaspoon chopped fresh parsley
1/2 teaspoon salt
1/2 teaspoon. dried leaf basil, crumbled
Combine all ingredients in a screw top jar. Blend well. Toss with vegetables.
Cover. Refrigerate overnight.
