Hi Nancy, with all the talk about fudge, someone asked me if I knew how to make a fudge called Cream Sickle Fudge? She could only remember the white chocolate and butter; does anyone have any idea what she is talking about?

Hi Nancy, I am writing in concern to all the people who are having problems with the 2 ingredient fudge sticking and having to spoon it out of the dish. At Thanksgiving I made the coconut-pecan frosting with chocolate chips and Carmel frosting with chocolate chips, with one I just buttered the bottom of the dish and the other one I placed aluminum foil in the bottom and then I buttered it and I covered both dishes with aluminum foil and placed in the refrigerator for a couple of hours. I recommended to people that I have gave the recipe too to use aluminum foil and butter it then stick in the refrigerator to firm up. When you remove the fudge from the dish all you do is pull the foil up out and turn the fudge onto a cutting board then just peel the foil right off and then just slice the fudge. Mine came out just perfect and so far I am going to be making 5 different kinds of the 2 ingredient fudge for Christmas. Thanks Nancy and have a Merry Christmas.

Love your newsletter and appreciate all the hard work and time you put into making it such a great meeting spot for all of us cooks out here. This recipe is for Pecan Tassies for Linda B, Fairborn, Ohio in the December 16th newsletter (which I might add was my 62nd birthday).

This is a Christmas staple at most parties here on the Texas Gulf Coast during the holidays. We have a lot pecan ( we pronounce that "pea-con") trees so these are everybody's favorite small snack.

Tassies or Pecan Tartlets
Makes 48

Pastry
1 8 ounce package cream cheese
2 sticks margarine or butter
2 cups flour

Filling:
3 eggs- well beaten
2 cups brown sugar
4 cups chopped pecans
1 teaspoon vanilla

To make pastry: Mix softened cream cheese and margarine together; cut flour into mixture as if to make pie crust. Divide into 6 equal portions; then divide each portion into 8 parts. Press this into small muffin tins- these are generally referred to as 'miniature muffin pans' (or small tart pans if you have them).

Filling: Combine the eggs, brown sugar, chopped pecans and vanilla. Pour into the lined muffin tins- fill ONLY 3/4 full. Bake at 350 degrees for 20 minutes.

These also freeze extremely well, so you might consider preparing them in advance.

Hi Nancy, Babies, and all! Merry Christmas! Hope everyone is more prepared than I am! LOL

I'm wondering if anyone has a recipe that I used to have years ago. It had walnuts, sweetened condensed milk, cinnamon and evaporated milk. You boil some of it for a while (softball stage?), then mixed in the nuts and spread out on a cookie sheet. I can't remember the whole thing and I would love to make them for Christmas. Any help would be very appreciated!

Homemade Christmas ornament recipes


Hi Nancy and other newsletter readers, this is for Barb (dec. 17) I knew after I sent the recipe for the Hot Meat Sandwich that someone would ask about brick chili. It is a block of straight chili, no beans have been added and is solid. ( Is about the size of a brick and can be found in packaged meat department at Wal-mart. Margaret, Tulsa

Nancy don't remember if I have sent this or not. It is one of my husband's favorites and is so easy to make.

TANG CREAM CHEESE ROLL
2 (12 oz) tubs Philadelphia Cream cheese (Softened)
1/2 C. Tang (dry powder)

Mix well and roll in chopped pecans. I spray a large margarine tub with cooking spray, they sprinkle pecans until sides and bottom of tub are coated with the nuts, pack in the tang mixture, place lid back on and store in refrigerator. Turn out on tray and add crackers, chips, or vegetable strips around ball. Margaret, Tulsa

It has turned very cold tonight here in Amarillo.  We are expecting an ice storm with snow on top of the ice.  I went out this afternoon and got the essentials one needs when they are snowed in for a few days.  I got Siggy his favorite cat treats, Ditto a new toy and several cokes for me.

Microwave Cashew Brittle/ Microwave Peanut Brittle in the November 16 Newsletter, Page 2, Emma from Montana I tried this recipe yesterday and had to throw it in the garbage. The second time I microwaved this for 4 minutes (per the recipe), it burned after 2 minutes. I know the power of all microwaves is not the same so anyone making this, either reduce the power or reduce the time. I'm sure it would have been delicious had I not burned it.

I have a high powered microwave compared to the ones used in many recipes.  I usually cook things on 80% power and watch it closely the first time I make a recipe. The next time I make more adjustments.

I just had to comment on all the talk of buying a good set of knives. I think sometimes we women feel guilty for putting a lot of money into good knives or a good set of pots and pans. If you have to justify the cost to a hubby, just remind him of how expensive his tools are. Mine seems to have to buy a new tool all the time for one specific job. Then it sits for years until a similar job comes up. Knives and pots and pans are your tools. You use them every day and in the big scheme of things cost very little when you look at the jobs they are asked to do. Happy Holidays to all! Hope Santa is very good to everyone.

Here is a recipe for Bev who was asking for a spam casserole in the 12/17
newsletter. It is originally a ham recipe, but I dont know of any reason
spam could not be substituted. It is very TNT, and a big hit at family
reunions with picky eaters! So simple to make. Hope you can use it.

Ham and Noodle Casserole
1/2 (16oz.) pkg. dry noodles
2 cups diced Velveeta
1 Cup Cubed baked ham
1 regular can of cream of mushroom soup
1 Tablespoon of margarine
1/2 soup can or 1/4 cup of milk

Cook and drain the noodles. Melt Velveeta with the margarine, and 1/4 cup milk. Mix all together, and place in a large casserole. Bake at 375 degrees uncovered for 30 minutes. (I wait till the cheese is melted and a little brown on top, and the casserole is bubbling) Personal note: I like the versatility of this recipe. You can add or subtract the amount of noodles, meat, or soup to your liking. Or Lay 4 or 5 slices of American cheese or some shredded cheese on top before baking. I like mine cheesy!

Last night I made the choco icing with choco chips and added the miniature colored marshmallows and chopped pecans. I let it cool pretty good and then put out a bit on lightly buttered wax paper. Using the paper I rolled the fudge into a log wrapping it in the wax paper. I put all the logs in the fridge over night. This morn I got up and sliced logs into 1/4" pieces and they look like stained glass windows. Use to make candy comparable to this that we called Cathedral Cookies.

Nancy: I have been sharing the 2 ingredient fudge recipes with a friend and this is from an email I received from her this morning on offering another way of using it - sounds pretty, doesn't it!

This message is for the person who wanted a Spam recipe for her family of 4...Bev does not say where she lives but the request is in Dec 17th email which arrived today the 18th.

When I lived in NYC, lo these many days ago, we all had suyc a limited budget it is hard to know how we lived. $70 per week before taxes, $56.51 in cash was my take home pay and I worked on Madison Avenue and lived on 83rd Street between Madison and Park Avenues. But, we did and are all still alive and kicking. Soooooooo a frypan, a can of crushed pineapple, probably 2 cans of spam for a gamily of 4 who eats more than 4-21 year olds who are forever dieting, then something to put on the top of the slices of spam...perhaps hash brown potatoes that contain red/green peppers and even maybe chopped onions. I would still eat it in a New York minute!
And, as Julia would say, Bon Appetit. that would be Madame Childs.

Hi Nancy, this is for Teresa in South Dakota who needed a recipe for different potatoes that did not use any dairy. (December 18th newsletter)

A recipe, or technique if you will, that I use mostly when I make meatloaf is to peal and wash potatoes well. Cube into small bite sized pieces. (I usually figure on a half a potato per person then add a few more if it is a big crowd. In a large bowl pour in about a quarter cup of olive oil (again it depends on how many potatoes you use, if a quarter cup doesn't coat them all add a little more) and mix in, onion powder, garlic powder, seasoned salt and pepper. You can really add just about any herb that you want, or hot pepper. I usually just go with the onion and garlic powders, seasoned salt and pepper. Coat the potatoes well with the oil mixture. If making with a meatloaf just arrange the potatoes around the meat loaf and bake as usual. About half way through baking stir the potatoes. I am sure this would work well with meat balls as well. Depending on the time the meatballs need to cook, I might put the potatoes in the oven ahead of the meatballs to give them time to get nice and crispy on the outside and tender on the inside.

GINGER ALE SALAD
1 (6 oz.) pkg. lemon jello
1 pkg. Knox gelatin
1 c. boiling water

1 (3 oz.) lemonade concentrate, thawed
1 pt. ginger ale

Refrigerate until consistency of egg whites; then add fruit: 1 c. watermelon balls
1 c. each white & red seedless grapes
1 c. cantaloupe balls
1 c. bing cherries
3 sliced bananas
1 lg. can pineapple chunks, drained

Mix and return to the refrigerator. *Any type of fruit can be used other than what is listed.

Parsley Red Potatoes
2 tsp olive oil
1 garlic clove, minced
2 cups small red potatoes, quartered
1/4 tsp salt
1-1/2 tbsp chopped fresh parsley
Dash of crushed red pepper

Heat olive oil in a medium nonstick skillet over medium heat. Add garlic; cook 1 minute, stirring frequently. Add potatoes, cook 18 minutes or until potatoes are tender, stirring frequently. Stir in parsley, salt and pepper.
Serves two.


We can always use more appetizer recipes and this one comes from www.thedailyrecipe.com. I have used this one often and I thought someone else would like to have this.

Veggie Wreath
2, 8 oz., pkgs. Crescent Rolls
1, 8 oz., pkg. cream cheese, softened
½ cup sour cream
1 teaspoon dried dill weed
1/8 teaspoon garlic powder
3 cups finely chopped green vegetables, bell peppers, broccoli, cucumber, green onions
¼ cup chopped red bell pepper

Heat oven to 375ºF. Remove dough from cans in rolled section; do not unroll. Slice each dough section 7 times to yield 8 rounds each, 16 per package. Place custard cup on an ungreased cookie sheet. Lay flat dough circles around the center cup touching each other to form wreath shape, then arrange an outer ring. The circles should all be touching each other but do not press together. Remove the cup and bake at 375ºF for 11 to 13 minutes or until golden brown. Cool one minute; loosen with spatula and slide onto wire rack to completely cool. Place wreath on platter. In small bowl, combine cream cheese, sour cream, dill and garlic powder; blend until smooth. Spread the mixture over the wreath. Decorate the wreath with assorted green vegetables pieces, then sprinkle with red pepper. Refrigerate until serving time. To serve; pull apart the slices of the wreath. Yield 32 pieces.
Enjoy.

I read a recipe for Beef Stew and it said to use can potatoes that they don't get mushy. I used can potatoes, whole, this weekend for Beef Stew and that is so true. You would think after 50 years of cooking that I would not be discovering things like this. I will now use nothing but can potatoes for Beef Stew. Just thought that I would pass this hint along.

Baked Steak
Sirloin steak large enough for 2, cut into portions
2 green peppers, cut into strips
1 large onion, cut and in rings
4oz. can mushrooms, drained
2 2/3 c. ketchup
1-1/2 c. strong coffee
1-1/2 c. water
3 beef bullion cubes
1 or 2 14 1/2oz. cans whole potatoes

Brown meat in skillet, then remove to a baking dish. Add potatoes around steak. Sauté peppers, onion and mushrooms slowly. Stir in ketchup, coffee, water and bullion cubes. Let simmer about 5 minutes. Pour sauce over steak and potatoes.
Bake at 350 for 1-1/4 hour.

Cream Cheese Christmas Wreath Dip
2 (8 oz.) Pkgs. Cream Cheese (Softened)
1/2 Cup Miracle Whip Salad Dressing
1/3 Cup Grated Parmesan Cheese
10 Crisply Cooked Bacon Slices (Crumbled)
1/4 Cup Green Onions (Sliced)
Parsley and Pimento Strips (For Garnish)

Combine cream cheese and salad dressing until well blended. Add remaining ingredients and mix well. Form around a small bowl in the middle of a plate to make a wreath. Remove bowl. Add parsley for holly and make a bow out of pimento strips. Chill.

12/17/06 Nancy and friends and Carol in Ky. Here are the times and tips for the blasted turkey. It is called Safeway 2 hour turkey. It also says do not use convection heat ,It causes excessive smoking and be sure the oven is clean to prevent food burning and causing a burning odor. Prepare the turkey with normal thaw and cleaning . 30 minutes before preheat the oven to 475 degrees and use a meat thermometer to check the exact temperature inside the oven. Use aluminum foil to cap the drumsticks and the wings so nothing drips over the outside of the foil roaster. Set pan on lowest rack in a 475 degree oven.

turkey time chart

10 to 13 pounds......... 50 minutes to 1 and 1/4 hours
13 to 16 pounds...........1 and1/4 hours to 1 hour and 50 minutes
16 to 19 pounds......... 1 and 1/4 hours to 2 hours
19 to 22 pounds...........1 and 1/2 hours to 2 hours
22 to 24 pounds..........1 and 1/2 hours to 2 and 1/2 hours

Turkey is done when meat thermometer read 160 degrees
remove turkey from oven and cover with foil in a draft free location for 30 to 45 minutes. This time will insure that the internal temperature will reach 165 degrees

Terese in South Dakota. I am also a lactose person and I will give you a few hints . When a recipe calls for milk or cream. there are several alternatives to use. There is coconut milk in a can in the Asian food department. There is also liquid coffee creamer that is lactose free. The powder coffee creamer is also lactose free. I have learnt to make all my sauces using these products. Also Kraft parmesan cheese in green container is lactose free. There is Cool Whip that is lactose free, They say non dairy. This can make many desserts for your mother using fruits and nuts and most any other baking product that does not have dairy products, as coconut flakes and graham crackers and ice cream toppings. Hope this helps you select a recipe that you can prepare dairy free.

RE: Dec. 17th newsletter. Somebody asked about good knives.

I have 3 knives that I bought at a local flea market. I bought one the first time and loved it so I bought 2 more the next time. They were $6.50 each. They're made by Rada Mfg. Company. I also have the sharpener that RADA makes too. I keep them sharp all the time. I've had more expensive knives and hated them because they wouldn't stay sharp. Walmart used to carry the best knife, but it's just another thing they've quit carrying.

About the Pecan Tassies: I've made them twice and usually do a double recipe. I absolutely hate doing the crust in the muffin pan. Take too long and i have bad thumbs. So i went to the fancy kitchen shop and got a wooden tamper made just for the crusts purpose. Well, it didn't work so good. I don't know if it's because the dough is so soft or what. So i still do it with my fingers.

I did find an excellent use for the tamper. When you are measuring out brown sugar, you have to pack it for an accurate measurement which i hate and try to avoid using brown sugar. Now I don't have to not use brown sugar. I put a little piece of foil on the end of the tamper and it works excellent packing the brown sugar! So I didn't waste $10 for nothing!

Cinnamon Pecans
1/4 cup evaporated milk
1 cup sugar
1/4 teaspoon cinnamon
2 Tablespoons water
1/4 teas vanilla
3 cups pecans

Combine all ingredients. Dissolve sugar over medium heat. Add pecans and continue to cook, stirring frequently. Cook until pecans are completely sugared with no syrup left in pot. Spread on wax paper and let cool.

This is for Grace in AL (newsletter 12/16) concerning the Rachael Ray Fudge. Rachael said it probably came from the back of the milk can 30 years ago. It probably did . . .it's the Eagle Brand Festive Fudge Recipe.

3 C. (18oz.) semi-sweet chocolate chips, 1 can Eagle Brand sweetened condensed milk, 1 1/2 t. vanilla, 1/2-1 C. chopped nuts. Melt the chips with the milk, add vanilla and nuts. Spoon into the cake pan with the saran wrapped milk can placed in the center to form the wreath. Leave the top of the fudge chunky instead of smooth. Christmas Quick Bread Fruitcake
2 eggs
2 cups of water
1 pkg. of Pillsbury cranberry quick bread mix
1 pkg. of Pillsbury date or nut quick bread mix
2 cups of chopped pecans
2 cups of raisins
2 cups of (12-13 oz.) candied cherries
1 cup of cut-up candied pineapple

Heat oven to 350 degrees. Grease and flour the bottom and sides of a fluted tube or 10 inch tube pan. In large bowl, combine eggs and water. Add remaining ingredients. Stir by hand until combined. Pour into prepared pan. Bake at 350 degrees for 75-85 minutes or until toothpick comes out clean. Cool in pan 30 minutes. Loosen edges and remove from pan. Cool completely. Wrap in plastic wrap or foil and store in refrigerator.

SPICY GREEN CHILE STEW
2 lbs pork cubes
1-1/2 inches thick, well trimmed.
1 tbsp canola oil
3 - 12 oz cans of kernel corn, drained
2 stalks celery, diced
2 med potatoes, diced
2 med tomatoes
2 to 3 cans of diced mild green chilies
4 c chicken broth 2 tsp cumin
1 tsp oregano corn or flour tortillas

Over med- high heat, brown pork cubes in oil in dutch oven or deep skillet. Add remaining ingredients. bring to a boil; reduce heat; cover & simmer 1 hour. Serve hot with warm tortillas. Makes 8 servings.

Do you have any recipes for stir fry sauce without soy sauce? We have lots of stir fry for dinner and I use all kinds of veggies in them and sometimes nuts and morning star crumbles and also tofu. Do you know what Chinese restaurants use for oil? I have tried sesame oil and peanut oil both and don't get the same taste. Thanks for your help and I love your site!

I used to have a recipe of baked pineapple that had cheese in it along with bread cubes. All the recipes I see on the internet have cracker crumbs in them. I am really sorry that I let that recipe get out of my hands. Can you help me? I don't want the recipes that have eggs in them.

Mississippi Mud Cake
1/2 cup butter, softened
1 cup of sugar
3 eggs
3/4 cup all purpose flour
1/2 tsp. baking powder dash of salt
1/4 cup plus 1 1/2 Tbls. cocoa
1 tsp. vanilla
1 cup chopped pecans
1 ( 10 ounce ) pkg. marshmallows
Chocolate Frosting (see below)

Cream butter ; gradually add sugar, beating well. Add eggs, one at a time, and beat well after each addition. Combine flour, baking powder, salt and cocoa and add to creamed mixture. Stir in vanilla and nuts. Spoon into a greased 13x9x2 glass pan. Bake 325 degrees for 15 to 18 minutes. Remove from oven and top with marshmallows. Return to the oven for 2 minutes or until marshmallows are soft. Spread them over the cake. Immediately cover with chocolate frosting. Let frosting harden then cut into squares.

Chocolate Frosting:
1/4 cup butter or margarine
1/4 cup plus
2 Tbls. cocoa
1/4 cp plu
3 Tbls. warm milk
1 tsp. vanilla
1 ( 16 ounce ) pkg. powdered sugar

Cream the butter and add the cocoa. mix well. Gradually beat in the powdered sugar. Add warm milk and beat until of desired consistency. Stir in vanilla. Spread immediately over the marshmallows. Yields enough frosting for the 13x9x2 cake.

I am looking for a recipe I had several years ago called "Cranberry Jewel Salad". It had Jell-O, applesauce, cream cheese and I think some nuts. When it was nearly jelled, you folded in cubed jellied cranberry sauce "jewels". I sure would like to find that recipe again. Any help?
