This is for Janie in the 12-18- newsletter.


In the December 18 newsletter, JC in St. Louis, was looking for a recipe for Date Nut Loaf. If you are looking for a cake Date Nut Loaf, this is a TNT recipe. I hope this is what you are looking for.

Date Nut Loaves
2 cups apple juice
2 cups chopped pitted dates
2 cups white sugar
2/3 cup butter
2 eggs
3 cups sifted all purpose flour
2 tsp. soda
1/8 tsp. salt
1 tsp. vanilla
2 cups chopped nuts

Bring the apple juice to a boil and pour over dates, set aside. Cream butter and sugar.Add eggs and mix throughly. Sift together flour,soda and salt and add to creamed mixture. Alternate with vanilla and date water mixture. Add dates and pecans. Grease and flour 2 large loaf pans and fill with batter. Bake for 1 hr. 45 mins. at 275 until done or a toothpick inserted into center comes out clean. While still warm wrap bread in wax paper then a clean towel. This is a very moist bread.


I just fixed this for supper tonight and thought I would share it with ya'll. It would be great after the holidays for a "back to basics" dinner and leftover pork roast can be used in place of the pork chops, if necessary. Hope ya'll enjoy it as much as my family does.

Pork Chop Jambalaya
6 pork chops
salt, pepper, and Cajun Seasoning (I use Tony’s) to taste
1/4-inch oil in the bottom of the pot
2-chopped onions
4 stalks celery and leaves, chopped
1 bell pepper, chopped
2 ½ - 3-cups water
2-capfuls of Kitchen Bouquet
4-cups cooked rice
1-bunch chopped green onion tops

Heat oil in large cast iron pot or Dutch Oven. While oil is heating, season the pork chops to taste with salt and pepper. Brown down the seasoned pork chops, remove, drain, and (using kitchen shears), cut into bite-sized pieces. Sauté onions, bell pepper and celery in the same oil that the chops were browned in. When vegetables have wilted, drain them off in a colander and wipe out excess oil left in bottom of pot with a paper towel. Add cut up pork chops back to the pot, and 2 1/2-cups of the water. Stir in 2 capfuls of Kitchen Bouquet and stir, mixing well. Add back the cooked vegetables; cover and cook on medium heat for 20 minutes. Add the cooked rice and the snipped green onion tops. Sprinkle liberally (to taste) with the Cajun seasoning; cover and simmer for an additional 10 minutes. (Serves 6-8)

Hamburger Casserole
Brown 1 pound hamburger and a medium chopped onion.
Add 1 can cream of mushroom soup and 3/4 can of milk. Mix well

Line a 9 x 13 pan with tater tots or tater crowns (crowns are round and flat)
put hamburger mix on top of the tater tots and add 1 can drained french style green beans on top Grate some cheddar cheese for the top of green beans.then put the rest of the tater tots on top. Bake at 325º 1 hour or 350º for 45 minutes glass I use 325º metal pan 350º,

You could spray the pan with pam.
We really liked this and I used a salad with it, green or jello. I forgot all about this recipe.

Praline Crackers
1 stick margarine
1 cup brown sugar
1 cup chopped pecans
1 (16 oz.) box Ritz crackers

Preheat oven to 300º. Mix softened margarine, sugar and pecans. Place 1/2 tsp. of mixture on each cracker. Bake 10 minutes. Store in airtight container.

Nancy, I seem to remember that one of Nancy's Readers was looking for a recipe for peanut brittle using cashews instead of peanuts. I have one in a Taste Of Home Magazine that is perhaps what they are looking for.

Cashew Crickle
2 cups sugar
1 cup corn syrup ( I used light, but probably doesn't make a difference)
1/2 cup water
3 tablespoons butter
1 teaspoon vanilla extract
1/2 teaspoon baking soda
2 cups salted cashews

In a large saucepan, combine sugar, corn syrup and water; bring to a boil, stirring constantly, until sugar is dissolved. Cook, without stirring, over medium heat until a candy thermometer reads 300 degrees (hard-crack stage). Remove from the heat; stir in butter, vanilla and baking soda. Add cashews. Pour into a greased 15-inch x 10 inch x 1 inch baking pan. Cool; break into pieces. Yield about 2 pounds.

Editor's Note: We recommend that you test your candy thermometer before each use by bringing water to a boil; the thermometer should read 212 degrees. Adjust your recipe temperature up or down based on your test.

For Janie looking for a ground beef & tater tots casserole, here are two that my family likes very much.

Mason City Casserole
Serves: 4

1 lb ground beef
2 tsp garlic, minced
1 tsp salt
1/2 tsp black pepper
1 lg shallot, minced
2 T celery, minced
1 lb frozen tater tots
1 can cream of chicken soup

Preheat oven to 350. Grease a 9 x 9 square baking dish.
Mix beef, garlic, salt, papper, shallot & celery together in the baking dish.
Cover the top with tater tots and carefully pour the soup over the potatoes.
Bake 1-1/2 hours.

Tater Nugget Casserole
Serves: 6
1 lb ground beef
3/4 c onion, chopped
1/2 c celery, chopped
1 can condensed cream of mushroom soup
1 can condensed cream of chicken soup
1 c frozen green beans, thawed
1/8 tsp garlic powder
1/8 tsp black pepper
16 oz frozen tater tots

Preheat oven to 375. Grease a 13 x 9 baking dish. Saute beef, onion & celery over medium heat until beef is done; drain. Stir in soups, beans & seasonings & pour into a 2 qt casserole. Top with tater tots.
Bake 40 to 50 minutes, until mixture is bubbly & tots are golden brown.

Potato And Mushroom Hash
Serve this side dish with roasted chicken or pork.
Serves 4

4 strips Bacon, diced
1 medium Onion, diced
3/4 cup Mushrooms, sliced
2 large Potatoes, grated
1 1/2 teaspoon Parsley, chopped
1/4 cup Cream
Salt and pepper to taste
2 tablespoons Olive oil

Cook the bacon in a skillet until beginning to brown. Add the onion and mushrooms and cook until just soft. Remove to a bowl and mix with the potatoes, parsley, cream and seasonings. Heat the oil in the skillet. Add the mixture and cook (turning once) until browned on both sides.

This is my recipe for Date Nut Cookies .They are sooo good and easy to make.

Date Nut Cookies
1qt chopped pecans
1/2 lb. candied red or green cherries (chopped)
1/2 lb. chopped dates
1 small can coconut
1 can condensed milk
1 cup self-rising flour

Mix all together good and drop on cookie sheet .Bake at 300°for 25 minutes.

Frozen Cranberry Salad
1 cup whole cranberry sauce
1 can mandarin oranges
1 lg. can crushed pineapple-drained
1 can Eagle Brand condensed milk
1 lg. cool whip-thawed
1/4 cup lemon juice
1 cup chopped pecans

Mix together; put in pretty bowl; freeze. Serve with meal.

Is anybody looking toward the New Year yet? Well, if you are (and keep in mind Nancy will be taking a few well-deserved AFK), you might want to try this on New Year's Day.
This is the best cabbage I’ve ever eaten. It is wonderful. Try it.

I head of cabbage
olive oil
Creole Seasoning (I use Tony’s)
2-tbspn margarine

Cut 1 head of cabbage cut into 8 wedges. Lay each wedge on it own piece of aluminum foil (big enough to wrap tightly). Sprinkle each wedge with olive oil and generously with Creole Seasoning. Dot each wedge with several pats of margarine. Wrap tightly and cook in a 350 degree oven for 45 min to 1 hour. (Open one and check for fork tenderness.

Hi Nancy,
Here is an easy recipe that I make every Christmas for Spiced Pecans which is very popular anywhere I take it. It may have been in your newsletter before, but I don't remember seeing it during this holiday season.

SPICED PECANS
Beat 1 egg white with 1 teaspoon water until frothy.

Combine:
one half cup sugar
one half teaspoon cinnamon
dash nutmeg

Drop one pound pecan halves in the beaten egg white and stir until all pecans are moistened, then drop them into sugar mixture and stir until it is all absorbed.

This works best if you use your hands to mix. Pour on to a buttered cookie sheet and bake in a preheated 250 degree oven for one hour, stirring every 15 minutes.

Hello Nancy and everyone, I am looking for the fudge recipe that was on Hershey's cocoa can years ago. Can any of you help me. Would be greatly appreciated. I made 3 kinds of the 2 ingredient fudge and took it to our W.M.U. (church meeting ) last night and everyone loved it.

I had made the one with cream cheese frosting & toffee chips. It didn't want to firm up like it should ,so I saw in a newsletter a few days ago where another person had same problem, so her daughter said to roll in balls ,roll in powered sugar and nuts. Well I did that and it saved the fudge! everyone raved about that. I want to wish everyone here a Merry Christmas ,or how ever you may celebrate the holidays. Nancy, give furry friends a big hug for me. we have a 9 month old Jack Russell and we love him to death. Going to dress him in Santa Claus suit on Christmas day to surprise granboys when they get here. Looks like it going to be a warm hoilday here .Temp's in the low 70's here today .

In the Dec. 18th newsletter Anita in Olean NY was looking for a Creamsicle fudge here is one not sure if it is the one she wants

CreamSicle fudge
3 cups sugar
2/3 cup of cream
1-1/2 sticks butter
7 oz jar marshmallow creme
12 oz white chocolate chips
3 teaspoons orange extract
Orange food coloring

Combine 3 cups of sugar 2/3 cups of cream and 1 1/2 sticks of butter in pan, boil for 5 to 7 minutes or until 240 degrees on candy thermometer, remove from heat and add 12 oz of white chocolate chip and 7 oz of marshmallow creme, blend well. Take out one cup of this mix and set aside, to the other mix add 3 teaspoons of orange extract, and orange food coloring mix well.
Pour in a buttered pan and take the one cup of white mix and pour on top. Refrigerate for 1 hour remove and cut into squares.

Tastes just like a creamsicle

Creamsicicle fudge
1-1/2 Sticks of Butter
2/3 cup Evaporated Milk
3 cups Sugar

Combine and boil 5 minutes. Remove from heat.
Stir into this :
1 (12 oz.) Package of Nestles White Morsels and 1 (7 oz.) jar of Marshmallow Cream

Set aside 1 cup of the above mixture.
To the remaining mix add and stir well:
3 tsps. pure orange flavoring
12 drops of yellow food coloring
9 drops of red food coloring.

Pour into a buttered 9x13x2 inch glass dish. Stir reserved cup of mixture and pour over mixture in dish.
Swirl gently with knife. Let set. Cut into small squares.

Tater Tot Casserole
1 lb. ground beef
1 can cream of mushroom soup , 1/2 can milk
1/2 cup chopped onion (1/2 tsp. garlic powder ,salt and pepper to taste
1 can green beans

Tater tots (enough to cover top of casserole)
Grated cheddar cheese

Preheat oven to 350. Brown the ground beef, onion and garlic powder. season with salt and pepper, mix in 1 can drained green beans , 1/2 soup can milk and the cream of mushroom soup, mix well. Spread beef mixture evenly in baking dish., cover with 1/2 the grated cheddar cheese. Top with layer of tater tots then the rest of the cheese bake until mixture is bubbly and the tater tots are crispy.

Russian Tea Cookies
1 c butter
1 tsp vanilla
2 1/2 c flour
3 Tbs sugar
1 1/2 c powered sugar
2 c chopped pecans
1 Tbs baking powder
dash of salt

Mix butter, sugar, baking powder and vanilla thoroughly. Work in flour, salt, and nuts until dough holds together. If it is needed, add more flour, as hands must be free from dough. Shape 1-inch balls. Place them on ungreased baking sheet. Heat the oven to 350. Bake 10-15 minutes but not till brown. While the balls are still warm, roll very well in powered sugar then cool. When the cookies are cooled roll in
sugar again. Served with tea.

Surprise Hamburger
1 lb. Hamburger (not cooked)
Salt & Pepper to taste (I also add a little garlic powder)
1 Large Onion sliced into rings
1 Regular size can of Cream of Mushroom Soup
1 Regular size can of Cream of Chicken Soup
Small bag of Tater Tots (dont know the exact weight)

Pat the hamburger in the bottom of a casserole dish. Season it with the salt, pepper, and garlic if you prefer. Place the sliced onion rings on top of the meat. Mix the cream of chicken and cream of mushroom soups together, and spread on top of the meat and onions. Top with Tater Tots, and bake at
350 for 55-60 minutes.

My husband John and I would love to offer each of you and your families a very blessed and wonderful Merry Christmas. My nephew Justin is in Ramadi Iraq, and we cherish your prayers and thoughts. I got an email from him last week telling me the mortar fire is harsh, and his company had been hit. He
was at an IP Station which is an Iraqi Police Station. Some of his buddys had been air-evac to Germany due to injuries. Justin and others had to help administer medical aid. There were some injuries, but no fatalities at that time. I havent heard from him since then. I know he and the other brave soldiers are in God's capable hands, and trust that He will protect them. But we do cherish your prayers and thoughts. Thanks everyone.

Regarding making potatoes in a different way, I cut them up in small pieces, then mix with olive oil and onion soup mix. Bake at 400 degrees for about 1 hour, or until they are crispy. Very good.

To Sally in PA—my original recipe calls for a 12 oz tub of Cool Whip, however, I like to use more to make the salad creamier. I usually will get the larger tub and “just add until it looks right”. Sometimes I use the whole tub, sometimes there is some leftover. Sorry I didn’t specify this earlier.

Pineapple Casserole for Lola S in the December 18 newsletter. Of the many baked pineapple casseroles I have this is the only one with bread cubes and no eggs. Of course, it is from Nancy's newsletter, where else, and is the best of all of them. Colleen in Tallahassee

Scalloped Pineapple
For over 20 years this has been a family "must have" for Easter dinner. This side dish goes so well with ham. I don't always follow the baking directions, I often bake at different temperature and for a longer time, depends upon what's in the oven. This recipe is very forgiving.

4 cups white bread, cubed
1 cup melted butter
3 eggs, beaten
1 can 20 oz. chunk or tidbit pineapple
1 -1/2 cups sugar

Mix all. Pour into a buttered glass casserole. Bake at 350 for 35 - 45 minutes. I have baked for over an hour and it was still good. The brown crusty edges are my favorite part.

BETTY'S MYSTERY FRUITCAKE
Bake Betty Crocker Honey Spice Cake mix, following package directions. Cool and crumble into very large bowl or pan. Add following fruit to crumbled cake:
4 c. candied mixed fruit
1/2 c. each whole red & green candied cherries
1 1/2 c. seedless raisins
1 c. dates, cut up
4 1/2 c. pecan halves

Make up Betty Crocker Fluffy White Frosting mix, following package directions. Mix with cake and fruit. Pack TIGHTLY into foil-lined 10 inch tube pan or 2 (9 x 5 x 3 inch) loaf pans. Cover cake with foil and chill in refrigerator at least 24 hours. Cake should be kept refrigerated. Makes 6 1/2 pound fruitcake.

This is a tip for making pecan tassies. I roll out dough a little bit and use a bottle cap to make the rounds and slip them right in the miniature muffin pan. So easy.

Hello Nancy and Everyone out there. I have just found out that I am doing Christmas Eve for my husbands side of the family. We are just having dips and stuff like that. I Have been making my layered salsa dip for years so I won't mess with a good thing. But what I was looking for was to make a veggie tray and I wanted the recipe for the Christmas wreath with the veggies I understand you can also include crackers for this dip. If anyone has this I would appreciate .

This is in reply to Mary Alyce in the December 19th newsletter about the Cashew Brittle burning in her Micro. I have made the candy three times now and it has turned out perfectly every time. I believe my micro is a 1000 watt oven. I have had no problems and love the stuff. Kudos to Emma in Montana for a great recipe.

Hi All in Nancyland!
This is an appetizer a woman at work brought to a Christmas potluck. It was sooooo good. I've had the recipe on a beat up index card and I thought I would share it with you. Ive not seen this recipe anywhere

Maple appetizer
Brown 1lb of sausage links or more... even up to 3-4 lbs
set aside.

In Sauce pan blend
4 t cornstarch
1/2 t salt
1/2 c maple syrup
1/3 c of water
1/2 c vinegar
juice from 13.5 oz can of pineapple chunks
Bring this to boil stirring constantly. Add pineapple chunks, the precooked sausage links, 1 large green pepper cut in chunks about 2/3 cup and a 1/2 c of maraschino cherries (I rinse them) Cook for 5 more mins if you cook longer will lose its lovely color. Don't double liquid, juicy enough for extra sausage and pineapple.

This recipe is fabulous and served Christmas morning along with whatever lovely meal your serving. This is from Bertha one of the best cooks I know

I am wondering if anyone out there has ever made half a recipe of Aunt Bills Brown Candy? I'd love to have some but it is way too much for me to handle. I would love anyone's thoughts on this.

Aunt Bill's Brown Candy Recipe
6 cups sugar, divided
2 cups milk or half-n-half
1/4 tsp baking soda
1/2 cup butter or margarine
1 tsp vanilla
2 lbs pecans, broken, about 8 cups
/2 cup butter or margarine
1 tsp vanilla
2 lbs pecans, broken, about 8 cups

Combine 4 cups of sugar and the milk or half-n-half in a large, heavy saucepan. (Rub the sides of the saucepan with butter, to help prevent graininess.) Stir and set aside.
Put the remaining 2 cups of sugar in a large iron skillet over medium heat. Stir constantly until the sugar starts to melt. At that time, place the sugar-milk mixture over low heat, stirring occasionally until the sugar dissolves.

At the same time, continue melting the sugar in the skillet, stirring, until all is melted and it is the color of light brown sugar. Melting sugar scorches VERY easily, so watch carefully. The entire process may take almost 30 minutes; at the end, you want one pan of light-brown melted sugar AND the milk-sugar mixture at a very light simmer.

The next step requires family teamwork. Pour the melted sugar into the simmering milk-sugar mixture in a stream "no bigger than a knitting needle". Stir constantly! This step may take five minutes, and works best if someone strong pours the melted sugar v-e-R-y S-l-O-w-l-y.
Continue cooking the combined mixture to the firm ball stage (246 degrees; higher at high altitudes), do not stir, other than to scrape the sides of the pan occasionally.

Remove from the heat at once. Stir in the baking soda--the candy will foam vigorously, so call the children to watch this step. Plop the butter into the foaming mixture, and let everything stand without stirring for 30 minutes.

Add vanilla and beat with a wooden spoon until the mixture stiffens and loses its gloss. This process may take 10 to 15 minutes, so beat in turns with your helper . Add the pecans, stir to mix, and turn the candy out into a buttered 13-by-9-inch rectangular pan.
Let the candy cool until barely warm; cut in smallish pieces--it's rich.

Makes 4-1/2 to 5 pounds. NOTES : This candy is a WONDERFUL keeper if each piece is wrapped in aluminum foil, and the wrapped pieces stored in an airtight container.


For Oma in LA (Lower Alabama) and many others regarding the 2 ingredient fudge that doesn't set up. I'm wondering if stirring 1/2 cup confectioner's sugar into the frosting before mixing in the melted chips would firm up the fudge? It may be worth a try. Also, I went to the Pillsbury site as suggested by Rita of Grand Island NY. They did not warm their frosting before mixing it with the melted chips. I wonder if that too makes a difference in how long it takes to set up. Good luck.

On the funny side, I had a container of frosting in a shopping bag by the front door with some other grocery items in it. It was ready for my son to take to school the next morning for the Christmas food basket that his class was putting together for a family in the community. Our beagle, Clover, with the super nose, sniffed it out and ate the entire container. Needless to say she had a sick tummy that night!

Thanks to Elizabeth in Bendigo, Victoria, Australia for the instructions for making the Smoked Oyster - Philly Cheese Roll 12/17. My husband's colleague and wife used to serve something like that at holiday parties and we always wondered what was in it. I never new it could be so simple!

Thanks also to Doris in Oklahoma City for the Sparkling Frosting (Easy Bake Oven Recipe) 12/16. I was making cookies for 59 children total in my two sons' choirs. I multiplied your recipe by 6 and used it to decorate sugar cookies. I kept it a bit stiff so that the cookies would not be sticky. It was a hit! It went well with this slightly different sugar cookie with a hint of cinnamon submitted by Luby on Recipezaar.

Cut out Cookies
3 1/2 cups flour
2 cups sugar
1 1/2 teaspoons cinnamon
1 teaspoon baking soda
1-1/4 cups butter, softened
1 large egg
1 large egg yolk
1 teaspoon vanilla
Preheat oven to 350°. Mix flour, sugar. cinnamon baking soda. Cut in butter with pastry blender until mixture resembles coarse meal. (I use the whisk attachment on my blender). Beat egg and egg yolk with the vanilla and add to flour mixture. Mix to make a smooth (stiff) dough. Turn dough on lightly floured board and knead several times and form into ball. Wrap in plastic and refrigerate for 1-2 hours. Take half of dough and roll on lightly floured surface to 1/8" thick. Bake at 350° for 8-10 minutes until lightly brown around edges. Frost with favorite icing.

Hi-Merry Christmas to all! I love this place, and I especially loved the 2 ingredient fudge recipe-it was a hit at work. I am looking for a candy recipe that my mother in law used to make at Christmas time-it had Cheerios, peanuts, mini marshmallows and mixed with butterscotch candy coating-I can't remember all the ingredients-does anyone have the recipe.

I am looking for a utensil that - for want of a better name - will call a
"hamburger smasher" As I remember from the one time I saw it in a catalog it was kind of an x-shaped device on a handle and the description swore that it would help break up hamburger meat, etc. while cooking.

Really wanted it but the darn ole postage was almost as the item and I figured I could find it somewhere else. Now I REALLY want it - you know how that goes - and even checked with Amazon. Any ideas, anyone?

I'm already ready to pay the S&H but don't know where I saw it at this point.

I do enjoy your newsletter and have what I think is an important question. I sent this to you a few days ago and you did not print it. I don't know if I sent it to the right address or you didn't feel this was appropriate for the newsletter. Have a great holiday season.

We hear too frequently about e.coli stories from fresh produce. I would like to avoid this and checked the Internet for some information. I wondered if the e.coli got inside the fresh produce or was on the outside and could be simply washed off. I found it is on the outside but not easy to just wash away. The e.coli toxins have something sticky that causes it to stick to the produce like glue. My question is can the vegetable wash products that I never used before remove the e.coli toxins from produce. Most sources state this is a minor problem because the majority of US produce is safe but tell that to the people who got very ill from this. I live in an apartment and cannot have a garden and do enjoy lettuce, etc. I know someone in Nancyland should have the knowledge needed to answer my question. Lynn in Las Vegas
