In answer to a request made by J C in St. Louis in Monday's Newsletter
dated December 19, 2006:-
DATE AND NUT BREAD
1/2 pound dates, each one cut into 3 pieces with scissors dipped in water
1 1/2 cups boiling water
2 tablespoons butter
1 1/2 cups sugar
1 teaspoon salt
1 egg, beaten
1 teaspoon vanilla
2 3/4 cups sifted all-purpose flour (use more if necessary to make a thick
batter)
1 teaspoon baking soda
1 teaspoon cream of tartar
1 cup broken walnut meats
Pour the boiling water over the dates, butter, sugar and salt. Mix to
dissolve the sugar. Put aside until lukewarm. Beat the egg and add the
vanilla. Mix into the date mixture. Sift together 3 times the flour, soda
and cream of tartar. Add to the date mixture and stir. Mixture will be
lumpy. Add nuts and stir just until they are distributed. Grease and flour
a loaf pan (6 inches by 10 inches) or use two smaller pans (4 inches by 10
inches). Bake 1 hour or longer for large pan and about 35 minutes for the
smaller pans, or until a toothpick poked into the center of a loaf comes
out clean. DO NOT TRY TO SLICE FOR AT LEAST 24 HOURS. It can be wrapped in
plastic or foil and frozen.

Tator Tot Casserole
1-1/2 lb. ground round
1 can celery soup
5 slices American cheese
1 lb. pkg. Tater Tots
Spread raw meat evenly in 9 in. sq. baking pan. Spread soup directly from can
over meat. Place cheese slices in a diamond pattern, 2 slices in each of 2 rows.
Break the 5th slice and fill in the gaps. Completely cover with Tator Tots. Bake
at 350 for 1 hour.

This is for Janie who asked for a recipe using ground
beef and tator tots in the Dec. 18 newsletter. This was a favorite of our
daughter when she was growing up. It still is enjoyed by our family.
Ground Beef and Tators
1 lb. ground beef
1 bag of Tator tots or hash browns
1 regular size can French fried onions.
1 can cr. of mushroom soup
1 can cr. of celery
Cook ground beef in pan just until no pink is left. Spread in baking pan and top
with frozen potatoes. Mix soups together (do not dilute) and pour over meat and
tators. Bake 45 mins at 350 degrees. Sprinkle onions on top and continue to bake
until onions are browned , about 10 to 15 minutes. Yum!

Savory Sausage Balls
1 egg, beaten
1 lb. hot or mild bulk pork sausage
1/2 cup herb stuffing mix
1/4 tsp. rubbed sage
1/2 cup water
1/4 cup ketchup
1/4 cup chili sauce
2 T. packed brown sugar
1 T. soy sauce
1 T. vinegar
In medium bowl, combine egg, sausage, stuffing mix and sage; mix thoroughly.
Shape into 1" balls. Add to large skillet; cook over medium heat, turning
occasionally, 5-8 minutes or until browned on all sides. Remove from skillet;
drain on paper towels. Drain fat from skillet; discard. Add water, ketchup,
chili sauce, brown sugar, soy sauce and vinegar to skillet; stir well. Return
meatballs to skillet; stir to coat. Bring to a boil over medium-high heat.
Cover; reduce heat to medium-low. Simmer 30 minutes, stirring occasionally.
Transfer to chafing dish, if desired. Serve with wooden picks. Yield: about 24
meatballs. Tona in Bama
For Janie who is looking for a recipe for Tater Tot
Casserole. Here is my very, very tnt recipe:
Tater Tot Casserole
1-1/2 pounds ground meat
1 chopped onion
1 can Cream of Mushroom Soup
1 can Cream of Celery Soup
1 small jar Cheese Whiz (when I do not have this I just substitute Velveeta in
about the same amount)
Small package frozen Tater Tots
Grated Cheddar Cheese
Brown the ground meat with the chopped onions and season with pepper and perhaps
a bit of garlic (do not use salt as the Cheese Whiz or Velveeta is plenty
salty). Add the Mushroom and Celery soups along with the Cheese Whiz or cubed
Velveeta. Mix together well and place in a casserole sprayed with Pam. Bake @
350º for 30 minutes. Cover with grated cheese and allow to melt before serving.
This is a favorite of my family. It is delicious. I hope you will use this
recipe and enjoy it.

Nancy, I just saw where Bev (in Dec17th newsletter)
wanted a span casserole recipe. Here is the one I have.
Spam Casserole
1 can Spam
4 large potatoes (sliced thin)
1 onion (sliced thin)
1 can cream mushroom soup
1 can pet milk
Slice Spam thin into slices, (use a 9x13 baking dish) put a layer of Spam,
potatoes, then onions. salt & pepper to taste. Repeat layers, then mix soup and
milk together, pour over top. Bake at 400°until potatoes are tender. I hope that
was what you were looking for.

Chocolate Heath Trifle
1 (18.25 ounce) box chocolate cake mix
2 large boxes instant chocolate pudding
2 regular or 1 large size container Cool Whip
6 Heath bars
Bake chocolate cake as directed. Break cake into large pieces. Use half for
bottom layer. Mix pudding as directed on box, then spread half of pudding over
cake layer. Top with half of Cool Whip. Break candy into small pieces. Use half
of candy over Cool Whip. Then repeat layers. Top with remaining candy. Tona in Bama

newsletter for a recipe for Date Nut Loaf. This is my mother's recipe. Hope this
is what you are looking for.

Date Nut Loaf
3 c. sugar
1-1/4 c. milk
1/2 c. chopped nuts
1 box dates
Cook sugar and milk to a soft ball stage, in a heavy saucepan. Stir in nuts and
dates (don't know if they should be the whole dates or chopped). My mother
always lined an empty foil or waxed paper box with a damp cloth and then poured
the candy into the box and covered the candy with the cloth (this was a cotton
dishtowel). Close the box and put rubber bands around the box to help hold its
shape until the candy has cooled.
I wanted to the thank the person who gave the tip,
about wrapping celery in tin foil!! It really worked and stayed fresh for over 6
days. Thanks.

wanted to know if it is worth buying.

Hi Nancy and all,
I am looking for a recipe that I made a while ago. It's a Paula Deen recipe and
I think it was in a cookbook that I let a friend borrow. I haven't gotten the
book back yet. I checked online on Food Network but can't find it. It's for beef
stew and I think it had corn in it and green beans. They may have been in the
recipe or I may have just thrown them in to stretch it a bit. I have most of her
books but it's not in what I have here. If you can give me the name I can
probably find it online. Thanks for your help. Betty in ME.

Hi Nancy & purring assistants. I took your advice
regarding the frosting fudge & it has turned out great. In fact, I left the last
in the fridge for a couple of hours & it was too hard to cut. I waited about 15
minutes to & then was able to cut it. Nancy's tip was not to overheat the chips,
just enough to melt after stirring a bit. The peanut butter I made was
delicious. I used a pkg of Wilton's peanut butter melts (14 oz) found at
Joanne's Fabrics on sale for less than $2. with a can of vanilla frosting, a
pinch of salt & 1/2 t vanilla. I took it to a card party. The other was Andes
chips with cream cheese frosting. The ladies "had to have" the recipes. When I
told them, they could not believe it. Regarding potato recipes. On the back of
the Lipton onion soup box, it tells to chunk up washed unpeeled potatoes, mix
with enough olive oil to coat(2 -4 T). Then mix wth the soup mix. I do it right
in the pan I cook them in. Bake til crispy & done @ 450 for 40 - 50 min. They
are wonderful.
I don't measure. I cut up enough potatoes to fill a 13 x 9 pan without piling
them up. (kind of a single layer. I tend to cut them smaller so they have more
suface for the oil & soup mix).

she has 1/4 cup plus then 2 tablespoon cocoa and 1/4 cp plu, could she please

Just a quick note, since we are having the same kind
of weather here in Oklahoma, Nancy. I wanted to share this version of 2
ingredient fudge. Melt 1 pkg. of semi-sweet chocolate chips, 1 can milk
chocolate frosting and about 10 snack size Snickers chopped. Save some of the
snickers to put on top of completed fudge. I took 8 different kinds of fudge
(must have been around 10 pounds of candy, etc) and other chocolates to a
lunch/party for my DH work buddies. I didn't come home with one piece! Yea!

Hi Nancy, In the Dec.18th newsletter, Janie (no state
given) asked for a Jello salad/mold recipe that her Aunt made many years ago,
and the salad had shredded carrots, and shredded cabbage, and she mentioned Lime
jello. I think the one here might be what she's thinking about, but it calls for
lemon jello. I'm sure lime jello can be substituted. I've had this recipe for
over 40 years, so mine too, has been around for a long time. Hope this is what
she was looking for:
Vegetable Jello Salad
Mix 4 small boxes of lemon jello into 2 cups boiling water.
Add:
3 or 4 grated or shredded carrots and a small head of cabbage, grated or
shredded
Then add:
2 Tables. sweet pickle relish
1 teaspoon salt
Add a number 2 can crushed pineapple drained well, and sqeezed of juice,
reserving the juice.. Set aside about 2 tsp. of the juice. The rest of the
juice, you'll use as follows:
Measure the rest of the juice from pineapple plus 4 Tables. vinegar, plus enough
water to measure 1 ¾ Cup liquid. Mix well and pour into a large mold or glass 9
x 13 glass casserole. Chill till set.. Serve with mayo mixed with the 2 teaspoon
pineapple juice (or less juice, depending on the amount of mayo you want to use)
Janie, This is very good with the lemon jello, but if you make with lime, please
let me know how you and your family like it.

This is directed to Sandee in West TN. (Dec 18).
Sandee, Did you try dipping the wooden tamper in flour before pressing the dough
down when making the Pecan Tassies? I found that to work. One dip in flour usual
works for 2 tassies. Also, I chill the dough before working with it. Hope that
helps, but if not, at least you found another use for the tamper. That's a great
idea, and the next time I measure brown sugar, I'm using your "invention".

Hi Nancy, in the December 18th newsletter JC in St.
Louis requested a recipe for Date Nut Bread and Janie asked for a recipe for a
Jell-O Mold Salad, using Lime Jell-O, carrots & cabbage.
Here are a couple recipes I have had for years I hope they help.
Favourite Date & Nut Bread
1 cup chopped dates
1 level tsp baking soda
3/4 cup boiling water
1egg
3/4 cup light brown sugar
1 tsp salt (scant)
1 tsp. vanilla
1-1/2 cups all-purpose flour
1 tsp. baking powder
3/4 cup chopped walnuts or you can use pecans if you wish
1/4 cup melted shortening
Cut up dates, place in bowl, add soda, pour over boiling water. Mix well and let
stand until cool. Beat egg until light, add sugar gradually, beating between
additions. add salt and vanilla, combine with date mixture.
Add sifted dry ingredients and floured nuts. Add melted, cooled shortening. Mix
well.
Pour into a well-greased bread pan and bake at 300ºF to 325ºF for 1 to 1-1/4
hours.
Jellied Salad
1 package lemon or lime Jell-O powder
1-1/2 cups boiling water
1/2 cup mild vinegar
1 to 1-1/2 cups chopped cabbage
1/3 cup grated carrot
1/3 cup chopped celery, (optional)
2 tablespoons minced onion (optional)
1/4 tsp salt
a little pepper or to taste
Dissolve jelly powder in boiling water; when lukewarm add vinegar. When mixture
is cold and beginning to thicken, add remaining ingredients. Mix well and pour
into a large wet mold or cold wet individual molds. When set, serve unmolded on
crisp lettuce and garnish as desired.
Hamburger Tater-Tot Casserole
1-1/2 lbs. lean hamburger (93/7)
1 small can evaporated milk
1 can cream of chicken soup
Salt and pepper
Tater tots
Crumble uncooked hamburger into a 2-1/2 qt. casserole dish evenly covering
bottom. Sprinkle meat with salt and pepper. Mix soup and milk together; pour
over hamburger. Place tater-tots on top of mixture, 1 deep covering entire
casserole. Bake at 350 for 1 hour.

Oh So Simple Rolls
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon garlic powder
1 cup butter, melted
1 cup sour cream
Preheat oven to 340 degrees. Combine all the ingredients. Fill greased muffin
tins with mixture. Bake for 25 minutes. Tona in Bama
to Kara in NY, asking about tuna treats for cats.
Thought you would like to know that a vet has told me that tuna contains too
much ash, which will cause urinary track problems in cats. The ash causes
crystals in their urine. I would check it out with your vet.
