Hi Nancy, Siggy, and Ditto, and all others
This is for Sue in the Sept. 25th newsletter about the best instant
potatoes. I like the Idahoan in the red box and they also come in a 4
oz bag that makes 4-1/2 cups. I buy them at Wal-Mart. They are made from
100% real Idaho Potatoes. I use a 1 cup Pyrex measuring cup to make mine
in. For one person this is the best way, and they taste so good. Nancy I
have a suggestion for all of the Nancylanders. I keep a note pad by my key
board and as I read all the good letters and recipes from all these nice
people. I write the newsletter date, who it is from, and the name of the
recipe down that I think I might be interested in later and I have no
trouble going back and finding it. I also copy several of them off. I am
putting them in a notebook. I named it Nancy's Recipes.
I have enjoyed the odd sandwiches, and no one ate my favorite. It
was mustard on crackers, I put enough mustard so it would ooze up thought
the little holes in the crackers. Then I also would ride my bicycle three
quarters of a mile to my grand-mothers house for a biscuit and a big slice
of onion on it, some time I had cornbread if she didn't have a biscuit.
She also kept a crock bowl of chocolate gravy on the table at all time and
I would eat a biscuit with that good chocolate gravy. Oh!! that makes me
hungry. She always had me some thing to eat, sometimes she would have big
sugar cookies oh so good. This was in the late 40's and very early 50's.
Those were the good ole day's.

CHESS CAKE
2 Sticks Margarine
1 Box Brown Sugar
1 C. White Sugar
2 C. Plain Flour
2 tsp. Baking Powder
1/4 tsp. Salt
4 Eggs
1 C. Nuts
1 T. Vanilla
Melt margarine in large pot on low heat. Add sugars, vanilla, & eggs. Mix
well with WOODEN SPOON . Add flour, salt & baking powder. Batter should be
smooth. Add nuts - mix thoroughly. Pour into 10x14 or 9x13 greased pan.
Bake 325 degrees for approx. 50 min. or until cake falls. Cool - cut into
squares & remove from pan. Enjoy!! These are rich and oh so good!!

Chicken Fried Steak With cream gravy
1-1/2 pounds round steak, tenderized (pound with mallet) or purchase
tenderized
1 cup flour
1 tsp. salt
pepper
2 eggs, slightly beaten
1/2 cup milk
Oil for frying
Cream Gravy:
6 T bacon drippings or pan drippings
6 T. flour
3 cups hot milk
salt and pepper
Trim steak and cut into 4 pieces. Combine flour, salt and pepper. Dredge
all steak pieces in flour mixture until lightly coated. Combine eggs and
milk. Dip steak into egg mixture and dredge again in flour mixture. Chill
coated meat 1 -2 hours. (this is the secret to keeping the crispy coating
on the meat while frying)
Heat 1/2 inch of oil in a skillet (cast iron is best). Fry until both
sides are golden brown.
To make gravy, remove cooked steaks from pan and transfer to warm oven.
Retain 6 T. of drippings or use bacon drippings. Add flour. Cook and stir
until all fat is absorbed and flour begins to brown. Gradually add milk,
stirring fast after each addition with wire whisk or fork. Heat until
thickened. Season with salt and pepper. Pour over warm steaks, or if you
prefer, serve gravy on the side.
Serves 4 generous servings.

CIRCUS PEANUT SALAD
2 small boxes orange gelatin
2 cups hot water
30 Circus Peanuts candy (the little orange candies that are peanut shaped)
1 large can crushed pineapple, drained (save juice)
1 18 oz package Cool Whip
Mix gelatin and Circus Peanuts with 2 cups hot water. Add 2 cups cold
water (part of which is pineapple juice). Refrigerate until partially set.
Add pineapple and Cool Whip. Chill.

Peach Enchiladas

2 (8 oz.) tubes of crescent rolls
1 1⁄2 cups sugar
2 sticks of butter
1 tsp. cinnamon
4 firm peaches
1 (12 oz.) Mountain Dew
Melt butter, add sugar and cinnamon, unroll crescents and place peach
quarters in each one. Roll from large end to small. Place in 12” x 10” x
2” pan. Pour butter mixture then Mountain Dew over rolls. Bake for 45
minutes at 350 degrees.. (yields 16 servings)

Hi Nancy and all the readers out there. I'm needing some help. We recently
had dinner at Lambert's Restaurant (home of the thrown rolls) in
Ozark, MO (between Springfield and Branson) We were served a cucumber
and onion salad which was dressed with water, sugar, vinegar, and pickling
spice. Does anyone in Nancyland have a recipe which provides the quanities
of each? My husband doesn't eat raw onions, and loved this salad. Thanks
so much

that is 20 years old and uses the commode for both jobs. I need to know
what newsletter the recipe using lipton chicken noodle soup mix.
Also what newsletter about cleaning and curing cast iron skillets and
things. I have about 26 items that needs cured.

Corn Meal Cookies
(This recipe was found in a book dating back to 1820's)
Cream together:
3/4 cup margarine
3/4 cup sugar
Add the following ingredients until smooth:
1 egg
1 tsp. vanilla
Add and mix well:
1 1/2 cup flour
1/2 cup cornmeal
1 tsp. baking powered
1/4 tsp. salt
Optional:
1/2 cup raisins
Drop dough from tablespoon on a greased cookie sheet. Bake at 350 degrees
about 15 minutes until lightly browned. Makes about 1 1/2 dozen.

SOS Creamed Ground Beef
1 pound ground beef
1/4 cup all-purpose flour
1 cube beef bouillon
3/4 teaspoon salt
1 pinch ground black pepper
2-1/4 cups milk
1/4 teaspoon Worcestershire sauce
Brown beef in a large skillet over medium high heat. Stir in flour,
bouillon, salt and pepper. Sauté all together for about 5 minutes or until
flour is absorbed. Gradually stir in milk and Worcestershire sauce. Bring
all to a simmer, stirring constantly. Cook until thickened, about 5 to 10
minutes. Serve hot over bread. Yield: 6 to 8 servings.
Hot Crab Dip
1 can Phillip's pasteurized crab meat (16 oz.)
6 oz. DiGiorno shredded Parmesan cheese
1 cup Hellmann's real mayonnaise
8 oz. Sargento shredded 6-cheese Italian blend
1 Tbsp. Polaner chopped garlic
1 tsp. McCormick minced onion
1/2 tsp. salt
Mix all ingredients together in large bowl. Mixture will be thick and
lumpy, but continue to mix until mayonnaise is evenly distributed. Pour
into 2 qt. glass baking dish or a decorative pie dish. Bake at 350 degrees
for 30 minutes. Or bake in a cut-out loaf of Hawaiian bread, following
package baking directions. Serve from dish, with Triscuit crackers, Wheat
Thin crackers or Ritz crackers.

Carrot & Spice Bars
1 cup low-fat (1%) milk
1/4 cup margarine or butter
1 cup bran flakes cereal
2 eggs
1 jar (2-1/2 ounces) puréed baby food carrots
3/4 cup grated carrot
1/3 cup golden raisins, coarsely chopped
1 teaspoon grated orange peel
1 teaspoon vanilla
2 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 cup orange juice
1/4 cup toasted pecans, chopped
Preheat oven to 350°F. Lightly coat 13×9-inch baking pan with nonstick
cooking spray; set aside. Combine milk and margarine in large microwavable
bowl. Microwave on HIGH 1 minute or until margarine is melted; add cereal.
Let stand 5 minutes. Add eggs; whisk to blend. Add puréed carrots, grated
carrot, raisins, orange peel and vanilla. Combine flour, sugar, baking
soda and cinnamon in medium bowl. Add to carrot mixture, stirring until
thoroughly blended. Spread into prepared pan. Bake 25 minutes or until
toothpick inserted in center comes out clean. Insert tines of fork into
cake at 1-inch intervals. Spoon orange juice over cake. Sprinkle with
pecans; press into cake. Cut into 40 bars before serving.

Yes, using Splenda in anthing that requires the volumn of sugar does not
work unless you increase the volumn of Splenda. Here is what you need to
do:
Splenda Replacing Sugar in Cakes
1/2 teaspoon baking soda
1/2 cup powdered milk
1 cup Splenda Granular
Mix together and use when Splenda is called for in a recipe.

Baked Peach Oatmeal
3 cups skim milk
2 Tablespoons vanilla
One 8 ounce (1 cup) Egg Beaters
5 cups quick Oats
1 cup brown sugar
4 teaspoons baking powder
3 teaspoons cinnamon
1/2 teaspoons salt
1/4 cup margarine or butter
2 cups chopped frozen peaches
Combine together skim milk, vanilla, and Egg Beaters. Add and mix well
quick oats, brown sugar, baking powder, cinnamon, and salt. Stir in
margarine or butter and frozen peaches.
Set at least 3 hours or overnight in refrigerator. Bake at 350 degrees for
40 to 45 minutes until puffed and golden brown.

be used in place of the regular packaged/canned coconut. TIA for your

Crockpot Spaghetti Sauce
This recipe is for a 4 quart crockpot, half it if your pot is smaller. 12
servings.
1 lb ground beef
1 lb ground pork
1 medium onion, chopped fine
2 (28 ounce) cans diced tomatoes, with juice
2 (6 ounce) cans tomato paste
2 (8 ounce) cans tomato sauce
2 bay leaves
5 cloves garlic, pressed
4 teaspoons dried oregano
1 1/2 teaspoons salt
4 teaspoons dried basil
3 tablespoons brown sugar
1 teaspoon dried thyme
Brown meats and onion in a skillet and drain well. Transfer to your
crockpot. Add remaining ingredients and mix well. Cover and cook on low
for 8-10 hours. Serve over hot spaghetti noodles.

Crockpot Apple Crisp Dessert
6 medium cooking apples, peeled, cored, sliced
1 1/2 cups flour
1 cup packed brown sugar
1 tablespoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ginger
3/4 cup butter or margarine, softened
Optional toppings:
Vanilla ice cream, whipped cream or whipped topping, if desired
Grease slow cooker, line with apples. Mix together flour, sugar, spices
and margarine in a bowl. Cover the apples with this mixture. (Pack it on
top. ) Cook on high for 3-4 hours. Scoop out a portion and serve with any
or all of the optional toppings.

Crockpot Banana Nut Loaf
1/3 c Shortening
1/2 c Sugar
2 Eggs
1 3/4 c Flour
1 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
1 c Bananas; ripe, mashed
1/2 c Walnuts
Cream together shortening and sugar, add eggs and beat well. Sift dry
ingredients, add to creamed mixture alternately with banana, blending well
after each addition. Stir in nuts. Pour into well-greased 4 to 6 cup mold.
Cover with foil and tie. Pour 2 cups hot water in slow cooker. Place mold
on rack or trivet in pot. Cover and cook on high 2
to 3 hours or until bread is done. Serve warm or cool, with butter or
cream cheese or peanut butter.

Citrus Glazed Pecan Biscuits
For glaze
3 tablespoons frozen orange juice concentrate, thawed
2 tablespoons honey
For biscuits
3 cups unbleached all purpose flour
3 1/2 teaspoons baking powder
2 teaspoons grated orange peel
3/4 teaspoon baking soda
3/4 teaspoon salt
1/4 teaspoon ground ginger
3/4 cup (1 1/2 sticks) chilled unsalted butter, cut into 1/2-inch pieces
3/4 cup finely chopped pecans (about 3 ounces)
1 cup plain nonfat yogurt
3 tablespoons honey
First, make the glaze: Mix in orange juice and honey in heavy small
saucepan; bring to boil. Reduce heat; simmer until slightly thickened,
about 3 minutes. Set aside.
Position rack in center of oven and preheat to 425. Combine flour, baking
powder, orange peel, baking soda, salt and ginger in large bowl. Add
butter and rub in with fingertips until mixture resembles coarse meal. Mix
in 1/2 cup chopped pecans. Whisk yogurt and 3 tablespoons honey in small
bowl to blend. Add yogurt mixture to dry ingredients; stir with fork until
mist dough forms. Turn out dough onto floured surface and knead gently
just until smooth, about 10 turns (do not overmix).
Roll out dough to 10-inch-diameter round (about 3 /4 inch thick). Using
2-1/2-inch-diameter biscuit or cookie cutter, cut out biscuits. Gather
scraps; roll out to 3/4-inch thickness and cut out additional biscuits.
Transfer biscuits to large ungreased baking sheet. Brush tops of biscuits
twice with glaze; sprinkle with 1/4 cup pecans. Bake until puffed and
golden brown and tester inserted into center comes out clean, about 18
minutes. Serve warm.

Coconut Macadamia Jumbos COOKIES
1 C Brown sugar firmly packed
3/4 C Sugar
1 C Margarine/butter
1 1/2 tsp Vanilla
2 Eggs
3 C Flour
1 tsp Baking soda
1/4 tsp Salt
1 C Coconut
1 C Macadamia nuts
Heat oven to 350. Combine brown sugar, sugar, and margarine. Beat until
light and fluffy. Add vanilla and eggs. Blend well. Add flour, baking
soda, and salt. Mix well. Stir in coconut and macadamia nuts. Drop dough
by rounded tablespoonfuls 2 inches apart onto un-greased cookie sheets.
Bake for 10-12 minutes or until golden brown. Cool 1 minute; remove from
cookie sheets.

Annie's Fruit Salsa and Cinnamon Chips
2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 oz raspberries
1 lb strawberries
2 T white sugar
1 T brown sugar
3 T fruit preserves, any flavor
10 flour tortillas
butter flavored cooking spray
2 c cinnamon sugar
In a large bowl, thoroughly mix kiwis, Golden Delicious apples,
raspberries, strawberries, white sugar, brown sugar and fruit preserves.
Cover and chill in the refrigerator at least 15 minutes. Preheat oven to
350 degrees F. Coat one side of each flour tortilla with butter flavored
cooking spray. Cut into wedges and arrange in a single layer on a large
baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray
again with cooking spray. Bake in the preheated oven 8 to 10 minutes.
Repeat with any remaining tortilla wedges. Allow to cool approximately 15
minutes. Serve with chilled fruit and spice mixture. Makes 10 servings.
Nutritional information: 466 calories, 6 g fat, 7 g protein, 100 g
carbohydrates, no cholesterol, 349 mg sodium, 6 g fiber.
Creamy Gorgonzola Party Dip
4 ounces Gorgonzola cheese
1/4 cup heavy cream
1 teaspoon Dijon-style mustard
salt and pepper, to taste
1 tablespoon fresh chives, sliced
Place all ingredients (except chives to use for garnish) in food processor
and process until just smooth. Cover and refrigerate at least of few
hours. Add chive garnish before serving.

BBQ BEEF PIE
A homemade barbecued beef pie recipe.
1 1/2 pounds lean ground beef
1 can (approximately 15 ounces) stewed tomatoes
3/4 cup chopped onion
1/2 cup chopped green pepper
1/2 cup sliced celery
1/3 cup sweet pickle relish
1/2 cup ketchup
1 tablespoon Worcestershire sauce
2 teaspoons salt
2 teaspoons chili powder
1 teaspoon paprika
1/4 teaspoon pepper
1 package (10 ounces) cornbread mix, or 1 recipe cornbread batter
Brown ground beef; add all ingredients except cornbread batter. Simmer
mixture for 20 minutes; pour into a 9-inch square baking dish. Meanwhile,
prepare cornbread batter according to package directions; spoon over meat
mixture.
Bake at 425° for 15 minutes, or until cornbread topping is golden brown.
Beef pie serves 6.

Tuna Noodle Casserole
1 1/2 cups wide egg noodles, cooked, drained and kept warm
1 Tbs butter or margarine
1 Tbs all-purpose flour
1 cup Evaporated Milk
1/2 cup water
1/2 tsp Instant Chicken Bouillon
2 (6-oz.) cans tuna, drained
1/2 cup peas
1/3 cup crushed potato chips
Preheat oven to 400°F. Grease 1-quart casserole. Melt butter in medium
saucepan. Stir in flour; gradually stir in evaporated milk, water and
boullion. Cook over medium heat, stirring constantly, until mixture is
thickened. Stir in pasta, tuna and peas. Spoon into prepared casserole.
Sprinkle with chips. Bake for 8 to 10 minutes or until chips are golden
brown. Season with salt and ground black pepper.
For Freeze Ahead
Prepare as above; do not top with chips. Do not bake. Cover; freeze for up
to 2 months. Thaw overnight in refrigerator. Uncover.
Preheat oven to 400°F. Bake for 35 to 40 minutes. Sprinkle with chips.
Bake for additional 8 to 10 minutes or until chips are golden brown.
Season with salt and ground black pepper.
Servings: 4

I am wondering if anyone has heard of the product called Super-rich
butter powder? I tried King Arthur Flour where it said it could be
purchased, but they no longer carry it. I also tried numerous gourmet
shops but was unsuccessful. I would love to hear from anyone who knows
where I could purchase it. Fran from CA
Cherry-Red Raspberry Pie
Crust:
2 cups all-purpose flour
1 cup cake flour
2 tablespoons super rich butter powder, optional
1 cup shortening
1 whole egg
1 tablespoon apple cider vinegar
1/2 teaspoon salt
1/3 cup ice water
Filling:
1 (10-once) package frozen red raspberries, thawed
2 cups canned pitted sour cherries in juice
1 1/4 cups sugar
1/4 teaspoon salt
2 tablespoons butter
Milk, for brushing crust
1 tablespoon sugar, for sprinkling
For the crust: In a large mixing bowl, combine the flours and the butter
powder, if using. Add the shortening and using a pastry blender, cut in
the shortening until it resembles coarse crumbs. Set aside. In a small
bowl, beat together the egg, vinegar, salt, and water. Add egg mixture to
the flour mixture and combine with a fork, just until the dough comes
together. Do not over mix. Form dough into a disk, wrap in plastic, and
chill for several hours or overnight.
Preheat oven to 400 degrees F.
For the filling, drain the thawed raspberries, reserving the juice in a
measuring cup. Drain the cherries and add enough of the juice from the
cherries to make 1 cup liquid total.
In a saucepan, mix the sugar, cornstarch, and salt. Stir in the juice and
add the cherries, and simmer over medium-low heat until filling is thick
and clear, about 4 to 5 minutes. Remove from heat and stir in the butter.
Very gently fold in the raspberries. Set aside.
Using a little more than 1/3 of the dough, roll it out between 2 pieces of
plastic wrap to a size that will overlap the edge of a 9-inch glass pie
dish. Fit the dough in pie dish, trimming of excess.
Add the filling. Roll out the remaining dough to fit the top. Place the
dough over the filling, cut off the excess, and crimp edges to seal the
dough. Brush the top with milk and sprinkle with sugar. Cut 3 or 4 slits
for steam vents.
Place on the bottom shelf of the oven. Bake for 10 minutes, and then move
to the middle shelf, reduce the heat to 350 degrees F, and continue to
bake until the crust is a golden brown, about 30 to 35 minutes more. Cool
completely before cutting.

Another idea for Teahag and her nephews is to take Jiffy corn muffin mix,
mix according to pkg. directions, fill muffin cups about 1/2 full and then
put a cocktail weiner or you can use a regular hotdog and cut it in
thirds, put it in the corn muffin mix then cover hotdog with a little more
muffin mix and bake according to pkg. directions. It's kinda like a corn
dog without the stick.
