Baked Zucchini Pancake
1/2 small onion, chopped
1 small clove garlic, minced
2 eggs
3 medium zucchini, grated (about 1 1/4 pounds)
1 tablespoon flour
1 teaspoon grated Parmesan cheese
3/4 teaspoon salt
Dash of pepper
Coat inside of a large (10 inch) oven-proof skillet or omelet pan with vegetable
spray according to directions; heat over low heat. Add onion and garlic and
cook and stir until golden. In a medium bowl, beat eggs slightly; mix in onion,
garlic, zucchini, flour, cheese, salt and pepper. Spread zucchini mixture in
bottom of skillet. Bake in 350 degree oven for 25 minutes. Cut into wedges and
serve. Makes 4 servings.
