Orange Juice Pancakes
1/2 cup butter or margarine
2 tablespoons orange juice
2 eggs
1 cup orange juice
2 tablespoons honey
1 package biscuit mix
1/2 cup ground walnuts
For orange butter, in a small mixer bowl combine butter and the 2 tablespoons
orange juice. Beat with mixer on medium speed until fluffy. Transfer to small
serving bowl. Set aside.
For pancakes, in the same mixer bowl combine eggs, the 1 cup orange juice and
honey. Beat on low speed until combined. Add the biscuit mix and nuts. Beat on
medium speed about 30 seconds or until combined.
For pancakes, pour about 1/4 cup batter onto a hot, lightly greased griddle or
heavy skillet. Cook until golden brown, turning to cook other side when pancakes
have a bubbly surface and slightly dry edges. Serve with orange butter.
Makes 12 to 14 (4 inch) pancakes.
