Swedish Pancakes
3 large eggs
1/2 teaspoon salt
1 Tablespoon sugar
1/4 stick butter, melted
3-12 ounce cans evaporated milk,
1 1/2 cups flour
maple syrup
powdered sugar
Combine and blend ingredients with melted butter as last in a large bowl.
Pancakes will be thin when ladled onto a moderately hot griddle. Expect
pancakes to be no thinner than a tortilla. Cook till edges dry and surface no
longer liquid. Turn over. Pancakes will finish quickly. Serve with maple syrup
and
powdered sugar.
