Pie, Cobbler, Crisp, Torte, Mousse and Pudding Recipes
AMISH VANILLA PIE
1/2 c. firmly packed brown sugar
1 tbsp. flour
1/4 c. dark corn syrup
1-1/2 tsp. vanilla
1 egg, beaten
1 c. water
1 c. flour
1/2 c. firmly packed brown sugar
1/2 tsp. cream of tartar
1/2 tsp. baking soda
1/8 tsp. salt
1/4 c. butter
1 unbaked 9" pie shell
Combine first 5 ingredients in 2 quart saucepan. Slowly stir in water. Cook over
medium heat until mixture comes to a boil, stirring constantly. Let cool.
Combine rest of ingredients (except pie shell) and mix until crumbly. Pour
cooled mixture into pie shell and top with crumbs. Bake at 350 degrees for 40
minutes or until golden brown.
BLACKBERRY COBBLER
2 c. sugar
1/3 c. butter
2 c. flour
2 tsp. baking powder
1 tsp. salt
1 c. milk
2 c. blackberries
2 c. boiling water
Cream 1 cup sugar with butter; add flour, baking powder, salt and milk; mix
well. Pour into 12 x 8 x 2 inch baking pan. Pour blackberries over batter.
Sprinkle remaining sugar over berries. Pour boiling water over top. Bake at 350
degrees for 50 minutes or until golden brown. Serve plain or with cream.
BUTTERFINGER PIE
3 large Butterfinger candy bars
1 large cool whip
1 graham or chocolate crust
Crush 3 large Butterfingers between sheets of wax paper.
Add to Lg. Cool Whip. Place in graham cracker crust. Refrigerate or Freeze. No
need to thaw.
BROWN SUGAR PIE
1 box light brown sugar
3 eggs, slightly beaten
1 tsp. Vanilla
1 unbaked pie crust
Mix together all the ingredients, pour in the pie crust. Cook at 350 degrees for
45 minutes.
SUGAR FREE PUMPKIN PIE
1 (16 oz.) can pumpkin
1-1/2 c. skim milk
2 eggs
1/2 c. biscuit mix
20 to 22 pkts. Equal sweetener
1/4 tsp. ground cloves
1 tsp. cinnamon
2 tsp. vanilla
Grease a 9 inch pie plate or a 6 x 10 inch Rubbermaid container. Beat eggs and
add pumpkin, spices, biscuit mix and sweetener mix well. Microwave on half power
until thoroughly heated, stirring frequently. Pour into plate and microwave on
half power 20 to 30 minutes or until set. May need to shield edges with foil to
prevent over cooking. You will need a turn table for this. Don't substitute any
other sweetener in this pie.
