Honey Cheese Pie

pie crust:
1 cup flour
5 Tbsp butter
1 Tbsp sugar
2 Tbsp cold water

Sift the flour, add in butter and sugar. Once it's mixed well,
add in the cold water. Shape into a ball and put in
the fridge while you make the filling.

Pie filling:
1 pound Mizithra cheese
1/2 cup honey
1/2 cup sugar
1 tsp lemon peel
3 eggs
Mix the cheese, honey and sugar thoroughly. Grate the peel, beat the eggs, and then stir them in. Remove the crust from the fridge, and shape it into a pie crust shape in a pan. Put some foil over it, and weigh it down with something to keep it in shape. A smaller pan works well. Cook for 15 minutes at 350F to set.

Let it cool, then add in the filling. Bake at 350F for 45 minutes to cook.
