Impossible Salmon Pie
1 (15 1/2 oz.) can salmon
1 med. onion, chopped (about 1/2 c.)
1 sm. green pepper, chopped (about 1/2 c.)
1/2 c. shredded Swiss cheese
1 1/2 c. milk
3/4 c. buttermilk baking mix
3 eggs
1/2 tsp. dried tarragon leaves
1/2 tsp. salt
1/8 tsp. pepper
Sprinkle salmon, onion, green pepper and cheese evenly in lightly greased 10 x 1
1/2 inch pie plate. Beat remaining ingredients until smooth, 15 seconds in
blender on high speed or 1 minute with hand beater. Pour evenly into pie plate.
To serve immediately, continue as directed in TO SERVE except decrease baking
time to about 30 minutes. Cover and refrigerate no longer than 24 hours.
TO SERVE: About 40 minutes before serving, cook Impossible Salmon Pie uncovered
in 400 degree oven until knife inserted in center comes out clean, about 35
minutes.
