Popcorn Turtles
1-1/2 qt. popped popcorn
1 (14 oz.) bag caramels (unwrapped)
3 tbsp. Half & Half
1 tbsp. butter or margarine
1 tsp. rum flavoring
About 48 pecan halves
1/2 c. canned Choco-Fudge Frosting
Place popped popcorn in large bowl. In a medium sauce pan over very low
heat, heat caramels, Half & Half, and butter until caramels are melted,
stirring frequently. Remove from heat. Stir in rum flavoring. Pour caramel
mixture over popcorn and toss to coat. Arrange pecan halves in groups of 3
on a greased baking sheet in a star shape. Working quickly, spoon heaping
tablespoons of popcorn mixture into center of each pecan group. Place
frosting in small sauce pan over low heat until softened. Spoon over each
mound of popcorn. Makes 16.
Popcorn S'More Bars
2 qt. popped popcorn
15 graham cracker squares
4 c. miniature marshmallows
1 c. semi sweet chocolate pieces
2 tbsp. butter or margarine
Preheat oven to 350 degrees. Place popped corn in large bowl. Arrange graham
cracker squares in bottom of 13 x 9 baking pan, trim to fit if necessary.
Sprinkle with 2 cups marshmallows and chocolate pieces. Melt butter in 1
quart glass microwave measuring cup. Stir in remaining 2 cups marshmallows
and microwave until marshmallows look like putty. Stir to melt completely.
Pour mixture over popcorn and mix well. Spread coated popcorn evenly over
chocolate pieces in pan. Bake until marshmallows appear melted (about 6
minutes). Invert pan onto cutting board and cut into squares between graham
crackers.
Makes 15 squares.
Cranberry Popcorn Balls
3 qt. popped popcorn
1 1/2 c. water
1 tsp. whole cloves
1 tsp. whole allspice
2 cinnamon sticks
1 c. chopped frozen cranberries, thawed
1 1/3 c. sugar
2 tbsp. light corn syrup
1 tbsp. shredded orange peel
1/4 tsp. ground nutmeg
3-4 drops red food coloring
Preheat oven to 250 degrees. Place popcorn in a large, 4 inch deep, buttered
baking pan. Keep warm in the oven. Pour water into a large buttered
saucepan. Securely tie cloves, allspice and cinnamon in a piece of
cheesecloth and place in water. Cover saucepan and simmer 20 minutes. Remove
spices from pan. Stir in cranberries, sugar, corn syrup, orange peel, nutmeg
and food coloring. Cook over medium heat, stirring constantly until sugar
dissolved and mixture begins to boil. Continue cooking until mixture reaches
250 degrees on a candy thermometer. Remove popcorn from heat. Pour syrup
mixture slowly over popcorn, stirring to coat. Shape into balls. Allow to
cool, wrap in plastic wrap, tie with colored ribbon and give as gifts during
the holiday season.
Cheddar Cheese Popcorn
1/4 c. butter
1/4 c. grated cheddar cheese
3 c. hot popped corn
Melt butter; stir in cheese. Pour over popcorn and stir until every kernel
is coated.
Makes 3 cups.
