Potato Salad
2-4 strips bacon, cubed
1 med. onion
1/2 c. white vinegar
2 tsp. salt
3/4 c. sugar
1 c. water
2 tbsp. cornstarch
2 tsp. butter
2 qt. cooked, cubed potatoes
Fry bacon until brown; remove from pan. Add onion, vinegar, salt, sugar, 3/4
cup water, cornstarch blended with remaining water and butter. Cook until
thickened, stirring constantly. Add potatoes and bacon; serve warm,
yield 8
