Pleated Potatoes
6 medium-size new potatoes (1 pound)
Vegetable cooking spray
2 tablespoons margarine, melted
2 tablespoons water
1 tablespoon chopped fresh chives
1/4 teaspoon salt
1/4 teaspoon chervil leaves
1/4 teaspoon dried whole tarragon
1/8 teaspoon pepper
Cut potatoes crosswise in 1/4 inch
slices, taking care not to cut all the
way through so that potato remains
intact. Place cut side up in a shallow
pan coated with cooking spray.
Combine remaining ingredients, stirring
well, Brush potatoes with margarine
mixture; bake at 400 degrees for 1 hour
or until tender and slices have fanned
out. Baste occasionally with pan
drippings.
Makes 6 servings, 90 calories per
serving, 4 g fat, 0 mg cholesterol and
150 mg sodium per serving.
