Chocolate Pumpkin Cake
3 cups all purpose flour
2 cups whole wheat flour
4 cups sugar
3/4 cup vegetable oil
1/4 cup milk
3 cups cooked pumpkin or one 28-oz. can
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground cloves
3 teaspoons baking soda
2 cups chocolate chips
1 cup chopped walnuts
Preheat oven to 350°. Lightly oil 3 large loaf pans. Combine flours, sugar, oil,
milk, pumpkin, salt, cinnamon, cloves and baking soda in a large bowl. With a
handmixer mix on slow speed until all ingredients are well blended. Stir in
chocolate chips and nuts. Divide butter among the pans and bake for 65-70
minutes. Cool slightly before removing from pan. Cooked, mashed butternut squash
may be substituted for the pumpkin. These loaves freeze well.
