Cranberry Pumpkin Bread
4 eggs
2 cups pumpkin puree
1 cup vegetable oil
1 1/2 teaspoon vanilla
4 cups sugar
4 1/2 cups all-purpose flour
2 tablespoon pumpkin pie spice
2 teaspoons baking soda
1 teaspoon salt
4 cups cranberries
Preheat oven to 350°. In bowl, combine eggs, pumpkin puree, oil and vanilla. Add
dry ingredients and mix well. Add cranberries and mix well. Divide dough into 2
8x4-inch loaf pans. Bake for 50-55 minutes.
