Pumpkin Pound Bread with Cream Cheese Icing
2 c. sugar
4 eggs
1 c. oil
2 c. flour
2 tsp. cinnamon
2 tsp. soda
1/4 tsp. salt
2 c. cooked pumpkin
Mix sugar and eggs. Add oil and mi well on medium speed. Mix flour, salt, soda
and spices and add to mixture. Then add pumpkin and mix at low speed until
batter is well blended. Pour into a well greased and floured tube pan. Bake at
350 degrees for 1 hour.
Icing
1 (8 oz.) pkg. cream cheese
1/2 c. Crisco
2 tsp. vanilla
1 box powdered sugar
Mix cream cheese and Crisco. Add vanilla and sugar. Beat well. Ice cake.
