2 cups chicken stock
1/4 cup cooked chicken, chopped
1 tablespoon diced pimiento
2 tablespoons uncooked rice
salt
pepper
Heat the chicken stock to a boil. Add
chopped chicken, pimiento and rice.
Bring to a boil. Reduce heat and simmer
uncovered for 15 minutes. Season with
salt and pepper to taste.
