Fried Sweet Potatoes
4 med. sweet potato, peeled &
cut into 1" slices
4 c. water
Salt to taste
4 tbsp. butter or margarine
2 tbsp. sugar
Soak sliced yam in water with salt for 30 minutes. Remove
from water, drain and pat dry. Melt butter in large heavy
skillet until bubbly. Add yam; brown quickly on both sides.
Sprinkle with sugar, stir gently to coat both sides. Cover,
reduce to low heat, simmer for 15 to 20 minutes or until
fork tender.
Makes 4 servings.
