Maple Glazed Sweet Potatoes
6 medium sweet potatoes
1 c. maple or pancake syrup
1/3 c. orange juice
2 Tbsp. butter or margarine
1/8 tsp. cinnamon
1/8 tsp. nutmeg
dash of ginger
Wash sweet potatoes and boil until tender, but not soft.
Drain. Peel and cut into
lengthwise halves. Pour syrup into heavy skillet. Bring to
boil and add potatoes; lower heat and simmer until syrup is
thick and potatoes are well coated. Turn potatoes gently as
they cook. Serves 6. Marshmallows may be placed on top of
the cooked sweet potatoes and browned in oven to melt.
