Mashed Potato Casserole
3 c. cooked, mashed sweet potatoes
1/2 c. sugar
1/4 c. milk
1/3 c. melted butter
1 tsp. vanilla
2 eggs, beaten
1 c. flaked coconut
1 c. brown sugar
1/3 c. flour
1/3 c. melted butter
1 c. chopped pecans
Combine sweet potatoes, sugar, milk, melted butter, vanilla
and eggs and mix well. Spoon into lightly greased 8-inch
baking dish. Combine coconut, brown sugar, flour, melted
butter and chopped pecans and sprinkle over sweet potatoes.
Bake at 375 degrees for 25 minutes.
