Orange Sweet Potatoes
8 c. sweet potatoes, cut into 1/2-inch slices
1 c. diced apple
1 orange, cut into bite-size pieces
2 Tbsp. fresh lemon juice
1 Tbsp. brown sugar
1/2 c. plum wine or other sweet wine
5 whole cloves
Preheat oven to 375 degrees. Place sweet potatoes in a
saucepan with water to
cover. Bring to boil. Reduce heat; cover and simmer until
just tender when pierced with a fork. Drain sweet potatoes
and place in a casserole. Mix apple, orange, lemon juice,
brown sugar, wine and cloves. Pour mixture over sweet
potatoes. Bake covered for 30 minutes or until apples are
tender.
Makes 6-8 servings
