Stuffed Sweet Potatoes

4 large sweet potatoes
1/2 c. chopped English walnuts
1 c. light brown sugar
1/2 c. chopped apples
1 1/2 c. crushed pineapple or
15 oz. can, drained

Wrap sweet potatoes in foil; place in a 350 degrees oven until done. Take potatoes from oven; unwrap foil. Take 2 potatoes, split down center with knife until almost through. Slowly spread apart other 2 potatoes; place in bowl. Mash until there are no lumps. Add nuts, pineapple, apples and sugar, being sure to drain juice off pineapple. Mix this with mashed potatoes; stir until thoroughly mixed. Stuff mixture into split potatoes. Stuff as much as you possibly can. Wrap back in foil. Bake for 20 to 30 minutes at 350 degrees. Remove from oven. Serve hot or cold.
