Sweet Potato Biscuits

1 large sweet potato
2 eggs
1/2 c. sugar
2 Tbsp. soft butter
3 Tbsp. soft shortening
1 tsp. salt
4 tsp. baking powder
2 c. all-purpose flour

Boil in water 1 large sweet potato 40 minutes or until soft. Drain, let cool, peel and mash. Beat in large bowl eggs and sugar. Add 1 cup mashed sweet potato and mix well. Then add and mix in dough, butter, shortening, salt, baking powder and flour (1/2 cup at a time.) Preheat oven to 350 degrees. Roll dough on lightly floured board. Roll to 1/4-inch thick. Cut 2-inches. Bake 15 minutes at 350 degrees.
