Sweet Potato Cookies
3/4 c. fat
1-1/4 c. sugar
2 eggs, beaten
2 c. cooked, mashed sweet potatoes
1 tsp. vanilla
2 c. Mothers Best Flour
4 tsp. baking powder
1 tsp. cinnamon
1 tsp. cloves
1/2 tsp. nutmeg
1/2 c. broken nut meats
1/2 c. raisins, chopped
Beat fat. Add sugar and cream well. Add eggs and beat until
smooth. Stir in mashed potatoes (no lumps) and vanilla. Sift
dry ingredients together and combine with nuts and raisins.
Add to potato mixture. Drop by tiny spoonfuls onto a greased
baking sheet. Bake at 375 degrees for 20 minutes.
