Sweet Potato Custard
2-1/2 to 3 c. cooked yams
3 tbsp. margarine, melted
1/2 tsp. salt
1/4 c. orange juice
1 (8-9 oz.) can crushed pineapple, drained
Miniature marshmallows
Mash yams. Add margarine, salt, and orange juice. Beat until
light and fluffy with mixer. Add pineapple. Place in 1 1/2
quart casserole and dot top with margarine. Bake 15 minutes
at 350 degrees. Then top with marshmallows and bake until
brown, about 15 minutes more.
Serves 6.
