Sweet Potato Pound Cake
1 c. shortening
1/2 c. melted oleo
3 1/2 c. all purpose flour
1 tsp. baking powder
1 tsp. cinnamon
2 1/2 c. chopped pecans
1-1/2 c. mashed sweet potatoes
1/2 tsp. almond extract
6 eggs
1 tsp. salt
1 tsp. soda
1 tsp. allspice
1 1/4 c. buttermilk
Cream shortening and oleo; add sugar; beat well. Add eggs, 1
at a time. Beat well each egg (1 minute each). Combine next
7 ingredients. Stir well to cream mixture, alternately with
buttermilk beginning with flour and ending with flour,
tablespoon at a time. Grease and flour 1 (10") bundt pan.
Sprinkle nuts over bottom of pan and on top of cake. Bake at
350 degrees for 1 hour and 10 minutes. Cool 10 minutes in
the pan.
