Sweet Potato Pudding
3 lb. sweet potatoes
1/2 stick butter
1/2 c. evaporated milk
1 (8 oz.) can crushed
pineapple
1/2 c. sugar
1/2 tsp. vanilla extract
1/2 tsp. cinnamon
1/2 tsp. nutmeg
Boil sweet potatoes until tender. Drain water. Peel sweet
potatoes. Mix butter, 1/2 cup milk, 1/2 cup sugar,
pineapple, 1/2 teaspoon cinnamon, nutmeg and vanilla extract
with sweet potatoes. Blend all ingredients until smooth.
Bake in oven for 20 minutes.
