Sweet Potato Whip
6 lg. sweet potatoes
3 tbsp. melted butter
3 tbsp. brown sugar
2 eggs
Salt to taste
1/2 c. nut meats
Pare, boil and mash potatoes. Add beaten egg yolks with milk
enough to whip. Add butter and seasonings; fold in stiffly
beaten egg whites. Pile roughly in buttered baking dish,
sprinkle with nut meats. Bake 30 minutes in moderate oven.
