Microwave Turkey Estimated Cooking Times
Calculate cooking time by allowing 6 minutes of cooking time per
pound of turkey. Baste turkey with 2 parts cooking oil to 1 part
paprika. Wrap tips of wings with aluminum foil to prevent
overcooking. Place turkey, breast side down, in a plastic browning
bag. Tie the end loosely; this will act as a vent. Don't use metal
tie, use string. Place turkey in a shallow baking dish. Cook the
turkey half of the cooking time. Remove turkey from oven. Drain
juices carefully and reserve for gravy. Place a thin strip of
aluminum foil on the breast bone of the turkey; this will prevent
overcooking. Finish cooking the turkey. Let stand 15 to 20 minutes
before carving.

Turkey on the Grill
Here is the way I cook my holiday turkey on the grill - While my double burner
gas grill is preheating on high, I slip pats of margarine to equal about 1/4-cup
under the bird’s skin (about a 14-lb-er) all around. I also put ground thyme
sprinklings everywhere I put the margarine. Then I salt and pepper to our taste
and stuff the bird’s body cavity with sliced carrots and a sliced onion. I
sprinkle some sage over this and then I truss the drumsticks. Now I place a
pottery dish filled with water directly on the lava rocks on one side of the
grill and turn off that side of the grill. Adjust the other side to medium-high
and place the bird on a rack in a roasting pan over the water side (that is
turned off). Close the lid on the grill and do not open it for 5 hours. The bird
will be done and very tender and juicy. Now I have had time to do all my “oven
stuff” without being cramped with the cooking of the turkey. I put the bird in
the indoor oven on broil for about 5-7 minutes or until the skin browns and
crisis. Brushing a little olive oil for butter over it before this process will
help. I have served this to family and friends on many major holidays so it IS
foolproof and it IS good. Let me know if you try it.

Turkey Dressing
2 Turkey drumsticks
4 stalks celery
3 med. onions
2 tbsp. black pepper
Lowery seasoning salt
3 med. green peppers
2 tbsp. salt
Self-rising cornmeal
Self-rising flour
4 tbsp. butter (Crockery Shed Spread)
1/2 c. Miracle Whip
2 tbsp. garlic powder
1 doz. unsalted crackers
4 eggs
1/2 c. sugar
Bring to boil turkey drumsticks,
2 celery sticks (diced), 1 onion, 1 bell pepper, 1/2 tablespoon garlic
powder, Lowry seasoning and black pepper. Cook over heat until meat well
done. Preheat oven to 400 degrees. Grease pan with butter. Mix cornmeal
and flour into large mixing bowl 1/2 cup sugar, 2 tablespoons salt and
1/2 cup butter. Pour mixture into medium pan and bake for 30-40 minutes
or until golden brown. Test with fork or toothpick. Once completed, set
aside to cool. Cut into squares and crumble into large mixing bowl along
with 1 dozen of unsalted crackers. Remove turkey drumsticks from heat,
drain broth into separate pot. Pour 1/2 of broth into bread crumbs,
saturate completely. Reserve remaining broth for basting dressing
throughout the cooking (baking) process. Add fresh season salt, Miracle
Whip, 1 medium chopped onion, chopped celery and bell pepper (chopped
finely) to cornbread mixture. Add 1 tablespoon butter. Saute new
cornbread mixture over medium high for 15 minutes. Pour into greased pan
and bake 15-30 minutes. Use reserved turkey broth for basting every 10
minutes to keep moist. Bake until dressing in golden brown. Serves 20
people.

If you don't have much time,
you may want to bake your stuffing in a greased, covered casserole
during the last hour while the turkey roasts. An unstuffed turkey
takes less time to
cook
than one that is stuffed.
Although it may seem like a good idea to save time by stuffing your
turkey in advance, that's inviting trouble. Harmful bacteria can
multiply in the stuffing and cause foodborne illness. Stuff the
turkey just before you're ready to roast it.
Spoon your stuffing into the bird loosely so
there's room for it to expand as it cooks. You can fit one to two
cups of stuffing for every pound of meat.

Turkey Buffet Casserole
4 oz. med. white noodles, (2 c.)
1 pkg. frozen broccoli spears
2 tbsp. butter or margarine
2 tbsp. flour
1 tsp. salt
1/4 tsp. prepared mustard
1/4 tsp. pepper
2 c. milk
1 c. (1/4 lb.) grated American cheese
2 c. cut up cooked turkey
1/3 c. slivered toasted almonds
Preheat oven to 350 degrees. In separate sauce pans cook noodles and broccoli as
labels direct just until tender. In saucepan over low heat, melt butter; stir in
flour, salt, mustard, pepper and milk. Cook, stirring constantly until
thickened. Remove from heat, stir in cheese until melted. Drain noodles and
broccoli. Dice broccoli stems; leave flowerettes whole. Arrange noodles,
broccoli stems, turkey in shallow casserole or 8 inch square baking dish; pour
cheese sauce over all. Arrange broccoli flowerettes on top, pressing them
lightly into sauce; sprinkle with almonds. Bake uncovered 15 minutes or until
bubbling hot.
Makes 4 to 6 servings.

Almond Turkey Pie
1 cup grated cheddar cheese
1 tbsp all-purpose flour
3 cups chopped cooked turkey
1 1/2 cups diced celery
1 cup mayonnaise
2/3 cup chopped toasted almonds
1 tbsp lemon juice
1/2 tsp oregano
1/4 tsp salt
1/4 tsp ground black pepper
1 refrigerated pie shell dough
Preheat oven to 350 degrees. in a large bowl mix together 3/4 cup grated cheese
and flour. stir in chopped turkey, diced celery, mayonnaise, 1/3 cup chopped
toasted almonds, lemon juice, oregano, salt, and pepper. on lightly floured
surface, roll out dough n rectangle shape to fit 9" x 13" baking dish. transfer
dough to dish being careful not to stretch pastry. turn under the edges, and
flute to seal to dish spoon turkey mixture into pastry crust. sprinkle with
remaining grated cheddar cheese and chopped toasted almonds. bake 30 minutes, or
until lightly browned and thoroughly heated. 8 servings. I like this cause it
uses up not only a lot of the leftover turkey but the celery that i always seem
to have in excess as well!
