Turkey Meatball and Zucchini Casserole
1 lb ground turkey
2 slices of whole grain bread cubed
8 oz zucchini, chopped finely or shredded
1/3 c. grated parmesan cheese
1 egg white
1 clove of garlic, minced
1 tsp. salt
1/4 tsp. pepper
Preheat oven to 450 degrees. In a large bowl,
mix bread, zucchini, egg white, cheese, garlic,
salt, and pepper until moistened. Form into balls
(about 15), place on sheet and bake for 20 minutes.
Serve with Spaghetti and sauce.
